Some people change speed depending on the song/chart. I used to do consistent 11.3 until I realized I could probably do better at processing the notes in harder charts (especially append as a thumb player trying to play fingers) if I set the speed down between 11.0-11.2. There was also a time I was so tired I had to set the speed at 10.8. Similarly Jack used to consistently play at 10.7 but then as harder charts rolled in, he started making the speed lower so it would be easier for his eyes to process the notes (at least I think so, and this chart specifically has a lot of gold notes and the animations for those can make it hard to see upcoming notes)

He's using the lane cover feature. It's recommended to lower speed when using it
