Why did you add bread crumbs? I made one 2 days ago and I used 1 and half cup of flour, 7 eggs with 4 cups of fruit mix and 4 sticks of butter. It came out great. I might try it with bread crumbs.
The breadcrumbs give the cake a gummy texture, using breadcrumbs is the old fashioned way, people don't really use breadcrumbs nowadays, sometimes I used it, sometimes I don't, it's not necessary. You should try the sorrel fruit cake, the recipe is posted, and I didn't use breadcrumbs

@@pauletsmith2259 no, I did not add any liquid to the margarine and sugar. I used chiffon margarine, i removed the chiffon from the fridge overnight and the eggs as well. Everything should be at room temperature. If you are using butter, the consistency will not be as runny as mind because I used margarine. However, it doesn't matter if it is runny or not. Make sure to mix the sugar and butter until well combine (well smooth) If you want a cake and not a pudding, do not use breadcrumbs. Use only flour. Use 2 cups all purpose flour and 1 teaspoon baking powder. Also, put water into the oven while baking. Put water into a container, place it in the oven , then preheat the oven to 350 degrees F . The water in the oven will keep the cake moist will baking. Also, my coworker, put 2 tbsp. Of strawberry jam in her Christmas cake mixture and I must say, it is nice, she gave me a slice. Cups all-purpose flour 1 tsp.baking powder, 1/4 tsp. salt Add your favourite spices, cinnamon, etc, . To the creamed mixture add 1 tsp. Lime juice as well as 1 tsp. lime zest (make sure the white part is removed) Add the soaked fruits, add vanilla flavouring or extract, a tsp. Is good. I normally add a tsp. of strawberry jam (optional) you can melt the jam before adding it . Add the dry ingredients to the wet ingredients. Use a spoon to fold in the dry ingredients until well incorporated. Add the food browning, to give the cake a darker shade, do not add too much. If the mixture needs more liquid, add rum or wine. Pour mixture into prepare bake tins or use one tin about 9" (depending on how big you want the cake) put water into a container then place in the oven below the rack with the cake. This will regular the oven temperature. Bake cake in preheated oven at 350F or 177C for an hour or so. The key is to cream the butter and sugar well to incorporate air for light and fluffy cake. Tip: for me personally I use my hand rather than a mixer, I get a better cream. Sometimes I sit and watch TV while creaming the butter and sugar. I hope this helps 🙏

Wow, 4 lbs. Means the entire cake should weigh 4lbs. That's what I learnt in food and nutrition (cookery class) I didnt use a kitchen scale because I knew that the cake would weigh 4lbs based on past experienced. I will do a video soon explaining
