Overall looks like you nailed it man! Definitely look into a temp spike or a meater for better readings. Great job man, you learned a bit. Use two probes, one for each. Regardless, good job on that cook!

If I may make a suggestion to you. Do not trust the manufactures temp probes. I would suggest either : Meater, Ink Bird 4 probe, Or the Maverick XR Pro. I have the Maverick. I did the ice/boiling water test on it before I used it and it is very accurate. It gives a lot different readings than the manufactures. I did not see if you removed the safety grid from the hopper. I've done that on all my pellet grills. Makes it easier to level the pellets as well as emptying the hopper when changing pellet flavors. When your all done let us know how many times you had to refill the hopper please. Some pellets burn less than others.
Thank you for the suggestions! I will have to remove that grid to make it easier! I am shopping around for a remote temp probe to help out. As for the pellets, I topped them off about three times to keep them filled.
Would I be correct to assume you're a rookie at pellet grill smoking. I've been grilling for 40 year, my first cheap smoker back in '75. My WSM 18" 15 years ago. Seems like I got into grilling gas or charcoal forever. Only got into the pellet came 4 years ago and am still learning and still making dumb mistakes from time to time. I've had 3 different pellet grills and two different cabinets before I've settled in on what I like. Unfortunately I've gotten very opinionated and quite vociferous and prejudiced in my old age. I just like good food. You did a good set of video on this cook.
Yeah, I’m a newbie to pellet grills and I am loving my new Traeger! It is a deep learning curve and so different from charcoal! And trust me, any advice that helps me improve is most valuable! Thank you for the tips! I love to learn and share what I learn here! All for the love of smoke and food!
