I used to worked at a 2 Stared Japanese Omakase Restaurant (Washoku, not Sushi) . It was possible to do modifications BUT you had to communicate it at least 2 days in advance. Most extreme modification we ever did was in a party of 6 pax where one person had recently had surgery and could only eat soft foods and soups. We made it work.
Him touching all of your food with his bare hands but side eying you when you won’t eat it is insane. Read the comments, sounds dirty. Anybody who’s worked in a kitchen of any caliber knows if you’re serving food to people you should wear gloves. Also, if you’re a male you have utilized public bathrooms and know it’s not uncommon for BUNCHES of males to walk out with their hands unwashed. Thinking “Just cuz he’s a chef he WILL” wash his hands when a fresh pair of gloves would completely remove the realm of possibility for the CONSUMER OF FOOD is something you’d think people would just get.
In technality, the difference in the amount of bacteria on a gloved hand and a non-gloved hand are minimal. Gloved hands may sometimes even spread more bacteria and cross-contamination because the user may be less prone to washing their hands.
i feel modifications would be okay if you have allergies
This isnt the kind of place to come if you have food allergies. Not everything HAS to be for everyonE.
