Smoking a Tri-tip for the First Time

  • In this episode, I'll be smoking tri-tip on an Oklahoma Joe's offset smoker. Tri-tip comes from the sirloin of a beef and is very close in texture and flavor to brisket. The bbq cooking technique and final internal temperature of smoked tri tip is the same as brisket. This beef tri tip recipe is very similar in all respects to that of brisket, but with a shorter cook time. I start this video talking a little bit about challenges surrounding offset smoker fire management in cold weather--especially today in these windy, winter, sub-freezing temperatures!
