How to Ferment Chinese Hairy Tofu (w/ 2 Recipes to Enjoy It!)

    Furry tofu, or what we call 毛豆腐 looks scary, but it's surprisingly delicious and has a flavor reminiscent of cheese. This is something interesting and truly authentic, and you will have to dive deep into local streets or quaint villages in China to find it. It is actually very easy and fun to make at home. Please stick with me until the end because I will show you two different ways that you can enjoy this furry tofu. Let's hit the like button and get started.
    Ingredients for Fermenting Furry Tofu
    1 tsp mucor powder (Purchase Link - curatedkitchenware.com/produc...)
    1/3 cup boiled but cooled water
    2 lbs of firm tofu
    Ingredients for Making the Crispy Hairy Tofu
    1.5 cups of vegetable oil
    1 pack of furry tofu for deep-frying
    1.5 Tbsp of cooking oil for making the dipping sauce
    1.5 tbsp of minced garlic
    2 tsp of red chili flake (Amazon Link - geni.us/chili-flake)
    2 tbsp diced scallion
    2 Tbsp of cilantro
    2.5 Tbsp of soy sauce (Amazon Link - geni.us/light-soy-sauce)
    1 tsp of Chinese black vinegar (Amazon Link - geni.us/chinese-black-vinegar)
    1 tbsp of water
    Ingredients for Making the Fermented Bean Curd
    1 cup of vegetable oil
    1 lb of furry tofu
    4 tsp of salt
    1/3 cup of chili flake
    2 tsp of five-spice powder (Amazon Link - geni.us/five-spice-powder)
    1 tsp of Sichuan peppercorn power (Amazon Link - geni.us/sichuan-peppercorns)
    1/3 cup of high alcohol content liquor

    As China is not on my list of places to visit (actually most places aren't, I don't really travel much) this is something I never thought I'd have the opportunity to try. I don't know that I could be brave enough to do it since mold is in my brain as a "bad" thing.... but you make it look really delicious.

      If you like that funky taste or smell then you'll like it... The sauce helps but if you're not use to it, it'll smell and taste off to you....

    Sounds quite tasty. Do you know - is this the same mold used to make tempeh? If you allow the fuzzy cubes to grow too long, does the fuzz become black? Definitely must give this a try. Thank you for sharing.

    Oh! I've never thought to make my own! I've used the store-bought kind to flavor mussels, water spinach, and yu choi before.
    How about the store-bought red fermented tofu? What else gets added to give it that flavor and color?

    They look very intriguing. Is there a way to reuse the soaking oil after finishing all the tofu? It would be such a shame to throw away the oil, especially good oil like avocado oil is used. Thank you for sharing.

    Thank you for providing a source for the mucor powder. Could you please list the ingredients in english? Many organisms are cultured on grains such as barley and therefore the product may not be gluten free. Some people also want to know if a product is made with animal products.

      I had it one time in Chinatown in Oakland, California and it was horrible, and I’m a very adventurous eater, Szechuan being my favorite.
      Stinky tofu was too much.
