How to clean a shark for the perfect flake

- When it comes to processing a gummy shark correctly there are a few tricks of the trade and that starts literally the moment the fish hits the deck. Do it right and they are delicious, do it wrong and you waste a beautiful flake!
If you keep shark please ensure its sustainable as many species are in dire straits!

Genuine Question: Why not cut the fins off , when you took the head off?
They are only trying to get rid of the blood and chemicals out of the shark while at sea (so shark doesn't spoil). The fins can be done later on land nice and calm.....
But as a guy says above fins contain chemicals, so get rid of them as well....
Yeah an old western port fisho told me years ago vastly improved my catch rate on them cheers al enjoy mate
Thanks we have so many where I dive , but if you don't know how to prepare them leave them alone I will really try this some time.

Absolutely. They all have that amonia smell if not cleaned as soon as caught.
You should keep the head for berley
I understand many cultures prize the fish cheeks, if you wanted them, is that something you would fillet off the head or if keeping the head, how would it be processed?
Great info guys but you still can't beat a fillet of SA Mulloway. We call it Butterfish in our fish n chip shops .(Jewy in Eastern states)

Thought u had to leave the head on in Victoria,
You can remove the head forward of the last gill slit and you can gut it. The rest must remain intact. The actual measurement for Gummy in VIC is 45cm from the last gill slit to the start of the tail.

No in vic it is carcass form so they can be ID and measured which is from the last gill to the tail which is a tiny gummy!
Guys I suggest you also cut those fins off straight away before you put your catch on ice. Reason is any mercury in the fish is in the fins and base of the fins, and gummy is fairly high in mercury, cheers.

In Vic shark can be whole OR in carcas form.. (no head) Fisheries Vic CEO Travis Dowling advised this in an interview on TV

I think we call those smooth dogfish here. They have like sandpaper teeth if that's the same shark. They eat nothing but mollusk and shrimp.
I cut the tail first then the head afterwards.

depends on the state you are in it varies greatly obviously you should check in your local rules

The only thing wrong with this video is if you drop the blood of a gummy over the side 9 out of 10 times you won’t catch another so I do it into a bucket and dump it when I’m finished fishing

Sorry to say but the audio was terrible, as the photography. The camera focused on the speaker and not the entire removal of the sharks head and entrails.
If someone can't fillet a gummie shark after watching this you shouldn't have a knife in your hand.
