Just curious, but what's the deal with the dry exhaust that has the water exiting in the center of the pipe? Seen those before, but don't know anything about them. The dry systems I've been around have been jacketed with the water exiting though a separate hull fitting.

Mechanical fuel injection is like a carb it's run by a air valve / throttle blade the fuel is delivered by a mechanical pump like those mostly ran with old school cars
You have to remember that Aronow pretty much led the Apache adventure for Saccenti in the beginning. He borrowed a lot from Aronow's designs, being it from Cigs or Magnums.
The answer to that is really very little, considering it's a world championship winning offshore raceboat from the early 70's. We do all the work ourselves and race the boat regularly, with actually a proportionate degree of success, age considered. The boat has a hugely popular following on other forums, you would be either laughed at or torn apart for your degree of naivety. Jog on small man!
