Interesting topic.
I don't have much experience with blending espresso, but when my single origin bags of roasted beans (that I use for pour over v60) are almost finished, I set them aside and than from those leftovers I sometimes blend, and it can turn into a nice pour over.
I would like to also try to blend my own espresso, would be an adventure.

Sure. Sidamo is a good coffee for this as it changes it's character depending on the roast degree and often is a nice coffee in all roast degrees.
Hi, I have a slightly off topic question. I am planning to add some flavor on the beans by adding some syrups or honey. Should I add in the syrup or honey during the roasting or after the roasting ?
I'm sorry, I have no experience with flavoured coffees. In any case, I wouldn't put anything in the roaster. There are some roasts (torrefacto roasts), where they add sugar to the roast, but I have no experience with that. Some people are putting raw beans into barrels so that they get the taste of the spirits that have been in it before.

7:40 I wonder if you could abuse inconsistency in draw ratio of many-bean blends to create a (good) wildcard coffee. Perhaps there are certain blends that taste good in any ratio?
that's the idea behind omni roasts. I have to be honest, I prefer coffees with a clear target and expression - e.g. very fruity filter coffees, more balanced ones for everyday use, classic italian espresso,...

Are there official courses on this kind of detailed study of coffee and pairings?
Been asking the same question too... These are touched upon in barista & roasting courses but unfortunately, as far as I know it’s a trial & error process.
Having bits from sensory, barista & roasting class might help.

I don't know, I'm sorry, Blending is a part in many roasting and barista courses. There are some modules on the different platforms (e.g. coffeecourses.com has got one) and if you check on blogs,... like Sweet Marias, you will also find some idea's and inspiration.

Yes, you can. Quite some roasters are doing that as all roast levels pronounce different flavours.
