I lived in the north, including New Hampshire, for 50 years. I have lived here on the Alabama Gulf Coast for 16 years. You guys did a great job with your Southern cook. I also never had a grit and red eye gravy until I moved here. I love my Blackstone and you guys help me learn to love it more. Your channel is great. You all have a wonderful holiday. Thank you.
I like corn grits, in Italy they call it polenta. 1 cup of Bob's Red Mill Corn Grits (Gluten Free), 2 cups of water, 1 cup of butter milk, salt and pepper. Bring water and butter milk to low boil add grits and cook for about 15 minutes on low heat, stirring frequently. Then add a cup of shredded cheese ( I use 4 cheese blend ), cook on low for another 10 min stirring frequently. You can add chopped jalapenos too. Yummy side dish.
Put you some shrimp and cheese in those grits y'all will love them. Pepper can't forget the pepper. But y'all nocked it out of the park looked great made this Georgia boy hungry. Hussey's Giant Lobster look great also, good job all !!!

Hi Mark, Hussey did that lobstah justice! He really did! We were impressed he did the whole thing on the griddle. For the 3 of us, cooking a single meal in the cold isn't usually too bad but when we are filming it takes hours, so yah, we get cold. We filmed lastnight and agreed that going forward, whoever's garage we are in, we will have to build a bonfire in the driveway so we can take breaks and warm up a bit. 😀 Thanks for watching! -N
If one of you guys have an instant pot, you can cook the dry beans in 45 minutes, high pressure. If you all want a gift idea for your wife, get her an Instant Pot. Instant Pot is a brand name for electric pressure cooker. Make sure it has a yogurt button. Homemade yogurt is the best. Once you have made it at home, you will never go back to store bought. Hi Barbara, This is Nate, I am a huge fan of pressure cookers. I own 2 but they are old school ones, not the new digital ones. Believe it or not I cooked those beans for about 5 hours on the cooktop! I’m only a hour or so from Hussey. The pintos are best left in a crock pot all day with just ham ends in them for seasoning. Then yellow cornbread baked goes well with it too.
You doing ok. Being a southern boy we only used the drippings from the ham then added the other stuff. Watch Hussy with the lobster 🦞 looked good. Grits are only good with lots of butter and salt. I would come eat with you. Need some onion in the beans along with the chow chow.

Nice collaboration with the Hussey who I have been subscribed to for over a year. You guys did a great job as usual. I've never had any of that Southern fare myself. But it did look good. I enjoy the fact that you always have a good time together cooking as buds do.

You guys got the Redeye all wrong , Use the grease from cooking the ham and put some black coffee in and cook down. I haven’t made it in so long I have almost forgotten. It will be real thin. The taste is what you want. Just watched Hussey cook your lobster! This was a fun collaboration. I grew up in a different part of the south and I have never had grits or red eye gravy. It is fun seeing the regional cuisine differences. Keep up the good work!

Great cook guys. Grits need lots of butter n salt n pepper. Good with the gravy. Pintos are a staple in my house. Grits with eggs necessary!! Hungry had a good vid with the lobster. Enjoyed the challenge videos. Merry Christmas
After the grits are cooked pour them into a bread pan. Fill the pan up to about an 1 1/2" thick. throw the pan in the fridge and chill over night. The next day pull them out and slice them 1/2 to 3/4 thick. Put the slices on the griddle until crisp. serve with maple syrup.

Yall did a great job on everything. Being I live in SC, it's funny to hear someone say they have never tried grits or Redeye Gravy . I love putting cheese in my grits and my wife likes runny eggs in hers, so in other words, there is all kinds of ways to eat grits!!! Really enjoyed this collab!!!!

Oh yeah at minimal, butter, salt, pepper in the grits. But, like someone else mentioned. You can do bacon, cheese, sausage. Dress them up how you like. I do a lil garlic in mine. Especially if they are for dinner.

Red eye gravy is a rue with coffee, add some salt and pepper and a bit of milk. I like to use heavy cream! Dump in some of that ham pieces chopped up really good after you sear it, or some sausage! Beans looked good! Next time try searing the ham before you put it in. I've seen grits eaten hundreds of different ways, hot sauce, brown sugar, white sugar, jelly, salt pepper, syrup, molasses, cheese is awesome with a little ham in them too. Butter those biscuits! Just a little bit before you throw them on the griddle. Just lightly brown both sides then put them on your rack to finish baking. Melted butter on top when you take them off. I only seen one thing missing from hussey's box, cornbread! You got to try these beans on top of a nice piece of buttered cornbread! I use jiffy, it ads a little sweet! Great video guys, really enjoyed it! Reminds me of the response I get from the guys in Michigan every Tim I cook for them at our rondevous. I'm from the Missouri Ozarks! Currently in South east Missouri. Merry Christmas to ya'll!

Whats gong on CJ? If I had to describe the grits I would say it is like mashed potatoes but made with corn. They were pretty bland but not ever having had them before we wanted to do them plain at least once. Going forward the possiblities are endless, i plan to make them with chicken stock instead of water and mayb toss in some paremesean cheese. I can def see why they make a great side. It's a nice changeup for a side starch. Happy Holidays! -N

Y'all did great on the biscuits. Especially for a first try AND cooking them on a griddle. The grits are basically done when they are the consistency that you show at 16:58. Now I'm off to watch Hussey cook that lobster.
Thansk Keith, Truth be told Jeff saved our butts. The griddle was too hot when we laid them down and within 30 seconds jeff noticed the smell and we were able to get them up on the rack in time. Hi Mike, Chris and I have camp chef smokers, I can definately see some videos next summer integrating the smoker and the griddle. Right now we have been doing alot of sous vide. Amazing, you guys really did step it up to meet this challenge. Monday morning quarterbacking the biscuits, I guess I would try cooking the biscuits next time on greased parchment paper, on a rack, under the dome on the griddle. Other then that, you guys really did an excellent job putting this challenge to bed.

Outstanding! That came out way better than I expected and definitely better than I could do on a griddle. The country ham looked great and the grits weren't bad either, especially since you'd never even seen them before. In some places I've been to in the South it seemed every meal came with black eyed peas and red eye gravy and breakfast always included sausage or ham and grits.
Definately a challenging cook for us Tamer! I can think of literally 0 places to order grits where we live. Maybe if we went to cracker barrel they would have them? The red eye gravy is nuts. You guys did a great job! I haven't tried grits, red eye gravy or chow chow with my beans. In Kentucky, we make pintos by cooking the liquid down so it makes a thicker soup (i.e. soupbeans) and we serve with cornbread.

If one of you guys have an instant pot, you can cook the dry beans in 45 minutes, high pressure. If you all want a gift idea for your wife, get her an Instant Pot. Instant Pot is a brand name for electric pressure cooker. Make sure it has a yogurt button. Homemade yogurt is the best. Once you have made it at home, you will never go back to store bought. Hi Barbara, This is Nate, I am a huge fan of pressure cookers. I own 2 but they are old school ones, not the new digital ones. Believe it or not I cooked those beans for about 5 hours on the cooktop! I’m only a hour or so from Hussey. The pintos are best left in a crock pot all day with just ham ends in them for seasoning. Then yellow cornbread baked goes well with it too.

You doing ok. Being a southern boy we only used the drippings from the ham then added the other stuff. Watch Hussy with the lobster 🦞 looked good. Grits are only good with lots of butter and salt. I would come eat with you. Need some onion in the beans along with the chow chow.

You guys got the Redeye all wrong , Use the grease from cooking the ham and put some black coffee in and cook down. I haven’t made it in so long I have almost forgotten. It will be real thin. The taste is what you want. This is from my 89yr young mother Inlaw, born raised in Tennessee, also I noticed you You didn’t comment on the country ham , what you thought of , you did everything else. Good fun video!

Just watched Hussey cook your lobster! This was a fun collaboration. I grew up in a different part of the south and I have never had grits or red eye gravy. It is fun seeing the regional cuisine differences. Keep up the good work!

You use the coffee to make red eye gravy for the country ham and to sop your biscuits in. It’s a southern delicacy.

After the grits are cooked pour them into a bread pan. Fill the pan up to about an 1 1/2" thick. throw the pan in the fridge and chill over night. The next day pull them out and slice them 1/2 to 3/4 thick. Put the slices on the griddle until crisp. serve with maple syrup.

Yall did a great job on everything. Being I live in SC, it's funny to hear someone say they have never tried grits or Redeye Gravy . I love putting cheese in my grits and my wife likes runny eggs in hers, so in other words, there is all kinds of ways to eat grits!!! Really enjoyed this collab!!!!

Oh yeah at minimal, butter, salt, pepper in the grits. But, like someone else mentioned. You can do bacon, cheese, sausage. Dress them up how you like. I do a lil garlic in mine. Especially if they are for dinner.

Red eye gravy is a rue with coffee, add some salt and pepper and a bit of milk. I like to use heavy cream! Dump in some of that ham pieces chopped up really good after you sear it, or some sausage! Beans looked good! Next time try searing the ham before you put it in. I've seen grits eaten hundreds of different ways, hot sauce, brown sugar, white sugar, jelly, salt pepper, syrup, molasses, cheese is awesome with a little ham in them too. Butter those biscuits! Just a little bit before you throw them on the griddle. Just lightly brown both sides then put them on your rack to finish baking. Melted butter on top when you take them off. I only seen one thing missing from hussey's box, cornbread! You got to try these beans on top of a nice piece of buttered cornbread! I use jiffy, it ads a little sweet! Great video guys, really enjoyed it! Reminds me of the response I get from the guys in Michigan every Tim I cook for them at our rondevous. I'm from the Missouri Ozarks! Whats gong on CJ? If I had to describe the grits I would say it is like mashed potatoes but made with corn. They were pretty bland but not ever having had them before we wanted to do them plain at least once. Going forward the possiblities are endless, i plan to make them with chicken stock instead of water and mayb toss in some paremesean cheese. I can def see why they make a great side. Y'all did great on the biscuits. Especially for a first try AND cooking them on a griddle. The grits are basically done when they are the consistency that you show at 16:58. Now I'm off to watch Hussey cook that lobster.
Thansk Keith, Truth be told Jeff saved our butts. The griddle was too hot when we laid them down and within 30 seconds jeff noticed the smell and we were able to get them up on the rack in time. Hi Mike, Chris and I have camp chef smokers, I can definately see some videos next summer integrating the smoker and the griddle. Right now we have been doing alot of sous vide. Amazing, you guys really did step it up to meet this challenge. Monday morning quarterbacking the biscuits, I guess I would try cooking the biscuits next time on greased parchment paper, on a rack, under the dome on the griddle. Other then that, you guys really did an excellent job putting this challenge to bed.
If you get the air fryer model of the Blackstone, those biscuits will do awesome! Done lots of biscuits that way.

Outstanding! That came out way better than I expected and definitely better than I could do on a griddle. The country ham looked great and the grits weren't bad either, especially since you'd never even seen them before. In some places I've been to in the South it seemed every meal came with black eyed peas and red eye gravy and breakfast always included sausage or ham and grits.
Definately a challenging cook for us Tamer! I can think of literally 0 places to order grits where we live. Maybe if we went to cracker barrel they would have them? The red eye gravy is nuts. Such a different dipping sauce... Very interesting!

Hey guy! For your grits you can put cheese in them, I use Tabasco sauce or your favorite hot sauce. Alot of pepper helps the taste.

You guys did a great job! I haven't tried grits, red eye gravy or chow chow with my beans. In Kentucky, we make pintos by cooking the liquid down so it makes a thicker soup (i.e. soupbeans) and we serve with cornbread.
