  • This is how I make rhubarb syrup at home in the springtime with fresh rhubarb from our garden. I don’t cook it so it retains that fresh, beautiful rhubarb flavor in my cocktails.
    Obviously at the bar we have a much more laborious process to ensure our syrups consistently contain the same sugar content. But for home use, this is a really great and very simple way to bring that fresh flavor from the garden into the glass.

    I've done it by weight as written in the Bar Book and it works fine. I find weight easier than volume anyway, have a good set of scales as is.
