Here’s a simple recipe to make **Akki Roti with Bottle Gourd**:
Ingredients:
1 medium-sized bottle gourd (lauki), peeled and grated
1 cup rice flour (akki)
1-2 green chilies, finely chopped (optional)
1 small onion, finely chopped (optional)
1-2 tbsp coriander leaves, chopped
grated coconut
Salt, to taste
1 tsp oil (for kneading)
Water, as needed to form the dough
Ghee or oil, for cooking
Instructions:
#### 1. *Prepare the Bottle Gourd:*
Peel the bottle gourd and grate it using a fine grater.
#### 2. *Prepare the Dough:*
In a large mixing bowl, combine the rice flour, finely chopped green chilies, onion, coriander leaves, , grated coconut and salt.
Add the grated bottle gourd and mix everything together.
Slowly add water, a little at a time, to form a soft dough. The dough should be soft but not too sticky. You may need to use your hands to knead the dough well, as the moisture from the bottle gourd will help in binding.
Add a teaspoon of oil to the dough for extra softness and smoothness.
Let the dough rest for 10-15 minutes. This helps the rice flour absorb the moisture and makes the dough easier to handle.
#### 3. *Shaping the Roti:*
Divide the dough into small balls (about the size of a lemon or slightly smaller).
Grease your palms with a little oil or water and flatten each dough ball into a round disc using your fingers. You can also roll the dough between two sheets of parchment paper or plastic wrap to prevent it from sticking to your rolling pin.
If the dough is too sticky, you can dust the surface with a little rice flour while rolling.
#### 4. *Cooking the Roti:*
Heat a tawa (griddle) or a non-stick pan on medium-high heat.
Once hot, place the shaped roti onto the tawa.
Cook for about 30-40 seconds on the first side until small bubbles appear. Flip the roti and cook for another 30-40 seconds on the other side.
Apply a little oil or ghee on both sides and cook for another 1-2 minutes until the roti turns golden brown and crispy on both sides. Press gently with a spatula to ensure even cooking.
#### 5. *Serving:*
Serve the *Akki Roti with Bottle Gourd* hot, paired with coconut chutney, pickle, or yogurt.
Tips:
**Vegetables**: You can add other vegetables like grated carrots, spinach, or finely chopped capsicum to enhance the taste and nutrition.
**Spices**: Feel free to experiment with adding a pinch of garam masala or cumin powder for additional flavor.
**Crispiness**: For a crispier texture, you can increase the heat towards the end of cooking, but be sure not to burn the roti.
