      flat bar steel is mild steel, incapable of holding an edge for any appreciable amount of time compared to even decent steel.

    I have been trained by several master carpenters how to sharpen things like chisels and never have I learned such a streamlined way of sharpening blades. Well done.

      Chisels are different, you need to maintain exactly 90° on them and they are "chisel ground". Fairly different beasts in the sharpening world.

      Most "master carpenters" I know will use a belt sander/linisher for dressing a damaged blade, then finish it on stones.
      Similar process.

    Best thing I've learned about free hand. Ignore trying to set at an exact angle. Just match what's there. Start slow when learning. Eventually you get a good feel for it. I have no idea what angle any of my knives are set at. Somewhere between 20° and 15° I assume.
    Also just got to the magnified glass part. I got magnified glasses with built in LED. I love them.
    Love the guided belt system.
    Fast as a work sharp but with a flat bevel vs the curved bevel (I forget the term used)

      What you grind is convex grind with hand,its a good style for most knifes(also used on axe) since edge is going to last more and will be resistant to impacts-lets say you cut a stake and hit a bone .Unless you try to split atoms with each swing .With guide its easyer to get flat ground ,or double bevel grind.Honestly you sacrafice durability of blade being sharp when sharpening low quality cheap stainless or carbon blades(20-30$ for a set ) on guide sharpener.Of course it wont harm Frederich Dick 500$ knife and it will stay sharp for long time.

      I've learned that a constant angle is critical to a sharp edge, and it's very difficult to achieve freehand.

    My opinion is that the stone is used to establish a burr on the edge, which is then to be laid up using a steel. I fed my family for years by using blades of different design. They had to be constantly maintained. I'm still open to learning new techniques (even tho I'm over 60). That's one reason, out of many, that I enjoy your work.

    This was surprisingly better than I expected. He even mentioned how a convex bevel can hold the edge away from the hone if your angle is inconsistent and also how not to burn the edge with too much pressure and friction from the belt sander... Pretty brilliant. It's the reprofiling of the bevels that are always so time consuming... it only takes moments to actually polish up the edge and knock off the burr for razor perfection.

    Incredible how you have come out with a knife sharpening video, just as I'm getting into sharpening knives! I just bought a two-sided metal sharpening stone from my local hardware store and it's really helped all my knives. Just yesterday, I was at a used-tool shop and saw something gorgeous, an 8000 grit Japanese whetstone for only $70! I'm gonna buy it soon :) Super glad that you came out with this invention and video!

Ha ha ha....Joerg , well done again....I like your tool ideas.....when I was a young man , 50+ yrs back , in Africa I made hunting and skinning knives.....Used old steel files and circular saw blades.....I anealed them first......To ""cut "" a long story short , the sharpening was done by hand....I used engineers blue to help guide me......The knives were top quality , but out in the bush one needs to be able to sharpen a blunt one quickly....Top quality steel can be difficult to sharpen , so...quick to blunt , but quick to sharpen is good ja........I LOVE YOUR IDEAS ,YOUR DESIGNS ....AND....OH YES ! ...YOUR LAUGH...

    Slick idea with the power file. Knife makers use a belt grinder to get the basic edge, so this is even more accurate.

    Great video! Thanks for the tip on using magnifying glasses to make sure the edge gets sharpened right. I've been sharpening my knives for a few years now and surprisingly never thought of using magnifying glasses. Lol.
    I'd really love to see more videos on knife sharpening and how you do it and any other improvements or ideas you might have in this area.

    If you don't mind using power tools for sharpening your edged tools, you can also buy a cheap hand held belt sander and camp it into a vice. Of course, you will still have to keep a steady angle/pressure but you can get belts on all sorts grits and for little money too. Sharpening bigger blades will be easier than using a power file as you have more grinding surface to work with at a time, making grinding evenly easier.

    I bought a Work Sharp unit for $70 USD. It has an 80 grit belt for garden tools, 120 grit for corse grinding, and a 6000 grit for polishing. The built in edge guide makes it very easy and fast to sharpen any kind of knife. They are really great sharpeners.

      Take a look at different kind of edges, imo the V edges hold their edges less te than convex edges. What kind of weapons do you do ?

    Your sharpener looks like the same idea as the Lanskey sharpener I use. Instead of using a magnifier, you can feel the edge of the blade with your fingernail for a burr. When a burr develops evenly across the blade you can switch sides. Works great

      When the edge is squared off, and you create a burr from the squared off edge then the subsequent sharpening needs to be offset after or you end up with your "V" being offset.

      Jon Simmons When the burr is created and you switch sides, the next stone up removes the previous burr. Only on the last extra fine stone do you need to work both sides until even.

    I've had a sharpening system identical to yours except for the brand. Mine is a Lansky and I really like the way it works and I agree about the wobbly stand. I paid $25.00 on sale, they were $48.00. Dam I love your videos, you're the man Joerg. The stand you made looks like a patent in the making.

    What a great video! I HATE the time it takes me to sharpen knives the proper way, and I often make concessions with keeping my tools "okay sharp" as opposed to good and seriously sharp. I think with a bit of setup I won't have to anymore! This should save me a ton of time sharpening my kitchen knives.

    Lansky makes the same jig, little more sturdy though. I'll have to try the rod attachment for the belt sander, I have one air powered with 60 grit belts that I grind spot welds with. Thanks for the great idea!

    Jorg... you basically flipped the regular belt grinder with angled jig concept. But what makes this project amazing is that it helps when you cannot have a workshop like yours [where a belt grinder could be installed] and you have to sharpen knives anyway.
    Now let's think what if... For instance you bought different grit belts for the power file?

    Hey Jörg, if you have been using those stones for such a long time you should probably consider flattening them to get even better results.(if you haven't done so already) Since you use the middle of the stones more than the outer edges, they will develop a bow.

      Those are diamond plates. They don't need to be flattened. But after a while they lose diamonds and need to be replaced.

    I would recommend getting a PA multi-tool attachment for your grinder it was the best investment I made for knife sharpening also using a paper wheel puts a really razor edge on a knife. And I sharpend all my kitchen knives in under 5 mins.

    Joerg you now have the right tool I have found this typ tool is a fits all in my machine shop Knife blades you can't beat high carbon steel for the EDGE that last longer .

    My Grandfather used to carve soap for his many daughters to use. I remember him saying there is nothing sharper than a soapcarver's knife.
    I wonder how sharp the knives would be after a hundred or so strokes though a soap bar.
    I've been using a 99.44% soap bar on my building board to sharpen my X-acto knives.
    I've built three model airplanes so far with the same blade.
    Balsa wood is full of minerals which dull blades quickly.

      Not really 100% sure yet, still testing with current #11 blade, I remember my mother would sharpen her sewing needles by repeatedly sticking them into a bar of white soap.
      It may be helping my X-acto knife blade by lubricating the blade.

    Very cool video Joerg, i'm into knives and keeping them sharp. I got a Tormek T4 sharpening machine about 18 months ago and couldn't be happier, it does an excellent job. I also use my laptop and an electronic microscope to get a really good close look, and for a perfect mirror finished bevel you can't forget to strop the blade. I also use Japanese wet stones of different grits for quick touch up's. Thanks mate. Oh, i feed my cat Sam (the little bloke to you're left) the very same Felix food. hahaha

    Ive got a similar setup going on; including the microscope. One thing I really like about such a guide system is the ability to put on consistent microbevels; which are a major boost to the ratio of time invested to sharpness maintained. After putting on a single grind, just do one more pass with the finest stone, with a slightly higher angle, with very light pressure. This ensures your finest stone has made a nice and consistent contact with the entire edge; which otherwise can still be quite difficult due to flex in the system or inconsistencies in your movement. Also, I find you hardly lose any sharpness in practice from the slightly higher angle of the actual edge, while gaining a ton in retention and consistency. And the macro grind can still be as sharp as you want it; and this is the main driver of how hard it is to cut many everyday substances, like say a hard cheese, or zombie skull.

    I have something called the Lansky sharpening kit that I also bought around 20 years ago, almost identical to the Gatco shown here. It has 5 stones: extra coarse, coarse, medium, fine, and extra fine. It takes me forever to sharpen a knife with it, but the result is always very sharp.

    You can save a lot of hassle by using ink to see if you've ground all the way to the edge or not. Add sharpie (or highlighter and use a black light) to the cutting edge and when its all gone you're done, no need for microscopes. Also, if you really want to get it all the way sharp, you should finish it on a piece of leather to polish it. But this is the slingshot channel, maybe you can put a leather strap on that power sander?

      Have you ever really used a system like this? The oil removes the ink immediately, or at least renders it invisible.

    you can use your phone as a magnifier too, most smart phones can zoom in 4-8x some even more, but even their 1x seems to be a slight magnification. I use mine all the time on small print items.
    also, LOVE that power belt grinder. that is awesome and I will be making something like that soon myself, also might either order or make my own sharpening mount and sharpening set, depending on cost of it. Ive seen sharpeners with a little more precision go for 150 dollars and more, but this set looks a bit more simplistic but still reasonable results.

    Jorg, take an old leather belt and step on one end with your foot and pull taught with your hand. Then run your blades down it pulling the kinfes edge across it. It will remove microscopic burs and aline the knifes edge.

    Benchmade and Spyderco are my top favorite. I currently have a 940 Osborne by Benchmade and it ain’t easy sharpening S30V steel. Thanks Joerg

    I think its more effective if you perform an eight, moving the stone over the blade. It removes more material, otherwise you just cut the same grooves deeper and deeper.

    to keep your angle on the edge, run some ink (a sharpie marker will do in a pinch) along the edge and when you pass it over the stone watch where the ink is worn to see your progress

    Nice. I watch Man At Arms: Reforged, this makes me appreciate their skill much more. They do the grinding for their swords with a belt grinder/sander, but with no contraption like yours to keep the angles consistent. I dunno how they hold it steady and keep it consistent, just lots of practice I guess. They get real sharp edges though.

      I have the edgepro professional kit#4 and I have to say it is worth every penny. plus you can earn it back by sharpening every knife your relatives have for small fee. ;)

    i use a Lansky, same principle as the Gatco. I also use the Sharpmaker. If im reprofiling a blade i use the lansky to put a 15 degree per side edge on (or close to it, its hard to get it exact), and once im done i go to the sharpmaker to add a 20 degree per side microbevel, and just touch it up from time to time. then, i can use the sharpmaker to thin the edge when touching it up makes it too thick. diamond rods at 15 dps (the 30 degree slots), and work that edge down. then use the 40 degree slots again to do the microbevel. so easy.

    Design a sheath with mini dymond disks with a hand crank that moves the disks over the blades bevel to keep it sharp. Quick easy and it will extend the life of the blade. 😊

    I have watched hundreds of videos on knife sharpening and seen hairs split by super sharp knives with super steels, I have seen experts argue the use of 10,000 grit stones and stropping , but it does not matter how much money you spend on a naniwa stone or whatever else you fancy, if you cannot maintian the angle when sharpening ,you will fail time and again, I am average after years of practice , some days better than others, I like this guys ideas that simple device would help many of us get a good sharp knife. I am not so sure about the power file I never let my blades get that blunt, but yes for highly damaged blades why not? Good video sir

    I sharpen my knives once a week for work and home . That's a great idea if your home and have electricity . I use Tormek and is one of the best sharpeners you can buy . I'm super lazy want a really sharp knife that doesn't take a half hour to sharpen .

    I spent about 25 years as a boat carpenter and a sharp chisel or plane blade is a joy, anything less than shaving sharp is hell. Now days I'm retired with a small machine shop in my backyard. So what? Well I have a penchant for chisel edges on my knives and a bunch of grinding/honing tools to shape and sharpen them.
    Why regrind to a chisel edge? You can lay the flat side of the knife on a piece and plan off any high spots, or dig in, or you can scoop with the other side, and still do anything a double bevel knife will do. Some Japanese kitchen knives are chisel ground for those reasons. BUT, this is the best part, you only have to sharpen one side! You have touch up the flat side occasionally but never grind it. You simply grind a primary and secondary bevel on one side and sharpen and re-sharpen as needed. Once you've achieved a wire edge, you simply wipe it off on a soft buffing wheel by passing the wire once (and only once!) over the wheel. If you have a Makita rotary wet sharpener and a buffing wheel, the whole procedure takes about 3 minutes.

    Jörg kleiner tipp: fast alle Steine für öl schleifen sind genau so gut wenn man sie in Wasser einlegt für ne Stunde oder so mit dem vorteil das öl in die Oberfläche einzieht und man dann nur noch öl verwenden kann. Sprich lieber etwas länger warten und dafür wasser nehmen. Und der papier test sagt nicht viel weils da neben der schärfe auch auf den schliff, die dicke der klinge und die papierart ankommt, die meisten schmiede verwenden deswegen den rasiertest am unterarm

    I use belts to sharpen my knives, you need to be very careful with thin blades. But if you have a lot of knives to sharpen you will love having a belt system.

    Try this sharpness test with a very thin paper. Like newspaper or a page from a Bible. This fairly thick and stable paper can be cut quite easily and it's not really impressive. Although you get quite a good hint about the sharpness and you can feel if the edge is well polished or if there are still some dents.

    Hi Jorge, just a quick tip or trick.
    Get a wine bottle and give the top a few goings over with a carborundum or axe stone.
    Then you can pass the sharpened and shaped knife over it with some small pressure several times, in the fashion you see best fit.
    You only need to then do some quick and gentle stopping for the third and final stage.
    Its the fastest way I've found. BTW, you only ever need to grind the top of the wine sparingly before each subsequent use.

    You know, you could also skip the stones and move to finer sand paper. May get an even finer edge that way too because unlike your stoning: if you used progressively finer sand paper - all the scratches in the metal would be moving in just one direction outward towards the edge away from the spine of the blade: due to that being the direction the sand paper was revolving in. So not only would that be faster yet: but also produce even finer edges.

    When i started with straight razors i bought dmt diamond plates and a norton stone kit, also bought naniwa and shaptonceramic stones and shapton on glass stones 16.000 and 30.000 grit.

    If you extend the arm and the pivot point farther away... It'll be ideal for long blades

    You should try a lansky clamp, its imo better for the thicker knifes, as it keeps the angle true on both sides. gatco stones are imo better though.

    You'd achieve a much better result by using long strokes that continue the entire length of the blade edge.
