This game (maybe almost all of Stockfish's games), makes me think that human chess games don't really consider any possibilities. Stockfish with the kingside castling was really one of those pause the video moments.
I agree not many human GMs can do like Stockfish did disregarding the knight being taken instead moving its Rook to a more optimal square so it can do much more damage
Yes that move stuck out to me but it’s because Stockfish is on that next level already thinking moves ahead sure take my Knight while my Rook prepares to get busy Good Observation

When f6 was played, threatening to win the knight and stockfish literally didn't care and simply played Rae1, i was like WTF bro
