Fish head curry is commonly enjoyed in Malaysia and Singapore. With South Indian origins, fish head curry uses a combination of various spices and ingredients to create the delectable taste loved in Southeast Asia. Here is an easy fish head curry recipe with all the tips needed.
One of the most sought after curry in both Malaysian and Singapore is fish head curry. Commonly found at many Indian eateries like mamak, fish head curry is ordered as a side dish for steamed white rice. Just like other dishes found in Singapore and Malaysia, the recipe adapts to the local taste since it was introduced by the Indian migrants when they moved to the region. Thus, it is to no surprise that fish head curry is not known in India.
But, why fish head?
It may be disturbing to many. However, the meat of red seabream found at the jaws located below the gills and also on the back of the neck is sweet and delicate. It is the layers of fine meat structure that is able to absorb the flavours of curry or any sauce that comes with it, when eaten together. I have seen those who would only seek out for the fish head when the whole fish is served especially in dishes like steamed [Cantonese steamed fish](www.nyonyacook....
Due to its popularity, there is now a variety of fish head curries depending on the ethnic flavour profiles such as Nyonya Fish head curry or even Thai fish head curry. While there many different types of fish head curries, the Indian fish head curry still tops my list of all fish head curries. Indian fish head curry is also known as the healthier version among all as it does not use any coconut milk but yet is able to deliver the thick and luscious curry flavours. You need a few tricks to make that perfect fish head curry and I have you covered!
1. Fish curry powder
Fresh fish curry powder mix is a must. The quality and composition of the fish curry powder will affect the taste. Look out for Malaysian or Singaporean made fish curry powder mixture. If you are located in Malaysia or Singapore, fresh curry powder mixture can be bought at the wet market.
2. Type of fish
As mentioned, red seabream is typically used in fish head curry. Other white fleshed fishes such as sea bass, gilt-head bream or talapia are also suitable for this flavourful curry. In most western countries, fish heads are not available unless the whole fish is bought. It is of course possible if you plan to cook the whole fish (chopped into three parts). If there is still reluctance to cook fish head, use fillets or cutlets as a replacement. Most importantly, only use fresh fish and do not over cook them or the flesh will be tough!
3. Make fish head curry thick
Fish head curries must be thick in consistency. There is no discussion! There are two main steps to make the curry thick. First of all, use rice. Having rice as an ingredient in curry may be unusual to many. However, the starch in the rice will act as a thickening agent. Secondly, the curry needs to be simmered down until it reaches the desired thickness! Therefore, vegetables such as okra and aubergine are perfect since they soften in the curry as it is simmered.
There you go, three main tips to cook your perfect fish head curry as found in most Indian eateries! This dish goes perfectly well with white rice and other side dishes for Banana Leaf Rice. It is also easier to prepare compare to many other curries.

I’ve try to cook today and this is the best fish head curry recipe ever. It’s healthy and not much ingredients. My family really love it. Thank you for sharing chef 👍❤️❤️
May I suggest you make a long video, showing how you put everything together in real time for banana leaf rice, e.g. what to marinade the night before, when to start chopping vegetable, cooking rice etc. Useful for viewers to plan their time if they wish to follow your recipe. Cheers, love your videos!
I made this dish last weekend and it turned out delicious. I have one question: what is the brand or the model of the pan you used. All the pans I bought so far gets warped when heated. Your pan looks sturdy. THANKS
can't wait to make this tonight..and nothing better than having this on a cold snowy wintery evening in Canada!! could i jar or freeze the sauce without the veggies or fish?
Yeah!!! The curry was awesome but doing the fish curry without veggies is pretty nice to get the full flavor and taste of the fish as well the aroma too.... Simply yummy....
Made this this weekend and it came out wonderful! Thank you for the recipe. I’d never used rice to thicken the curry. I normally add in coconut milk. Also I didn’t know how much water the ingredients could take so I just kept the curry thick with a Masala consistency by adding just a few 1/2 cups of water over the time i cooked the curry. Delicious 👍🏽👍🏽👍🏽
Mee too! Never crossess my mind that people put ground toasted rice in a curry but Ima cook me this recipe soon, may be tomorrow. I am Malaysian (Malay)..
Looks delicious! And your trick to thicken the sauce, is awesome! Thank you for the recipe. Will try it soon.

Can you share why the needs for the roasted rice and it’s function in this cooking? It’s the first time I’ve heard of this method~
And secondly, can I roast the rice till brown, grind it to powder and store it in a jar for future uses? Or does it work better to only roast them when I wanna cook the curry?
Thanks! Much appreciated!
Thank you. You can find the information on the rice in the background section of the recipe. www.nyonyacooking.com/recipes/fish-head-curry~HyPIdPjvf5-Q Of course you can prepare it in bulk too :) Looking forward to seeing your videos in our community.

Damn! This looks delicious! I am in Seri Kembangan, Malaysia (near KL). Ima go buy me red snapper fish NOW and cook this dish tomorrow, my house so near Selangor Wholesale Market here they sell everything everyday 24/7 including fish and veggies and spices...
Yes,I did it & my husband Said it's so good.
Very yum looking. Grace another way you can do is to sauté the tomatoes with the onions n garlic. I have never done rice pound for curry thickening. I normally add more curry powder n do not add too much water to the paste
Superb...beautiful dish...both you and the fish curry!😍🤗
Hey Jeyne gotcha !😘
Tried this today. Wonder why I didn't come across it earlier. Turned out really good! Taste just like mamak fish head curry and the one I used to order near TMC Bangsar.

When you say visit the nonyacooking website for the recipe it takes is to nestle website. Errr you have your recipes on nestle site or am I missing some link?
That can't be. All of our recipes are on www.nyonyacooking.com. :) we have no association with nestle.
@@nyonyacooking Yes ok I've got it right in subsequent times. Btw I absolutely love your recipe. It's my go-to fish recipe! It's probably tlonenif the few that doesn't require frying your fish first. I keep gtg disappointed with other recipes cos they insist on frying as the only way to cook the fish for a curry. Yours is more sensible in soaking it in tamarind water... although I'm v surprised at the lack of salt in your entire process. Basically you just add salt only when the veggies are cooking. So in hindsight the fish hasn't been marinated in salt (most western recipes) nor cooked with it! Amazing. 🙌🏽
Cooking it right now! Thank you ☺️🙏🏽
Your videos are so inspiring, and reminds me so much of a perfect holiday in Kuala Lumpur, a Malaysia a few years ago. I am making Malaysian food for some good friends saturday, in Norway. :-)
We made it tonight and it's truly appetizing, thanks Grace for this simple and comforting recipe. We tweaked ours with Macadamia nuts instead of rice 😋
That's so cool to hear, Jane! Don't forget to upload a food snap on your Nyonya Cooking profile ;)
Hi Grace, I cooked last night, it's but I found a bit bitter, Donno why? I control the heat not burning the garlic and shallot.
You may hv added too much of fenugreek. That causes the bitterness.
I want to make this.
Lovely recipe but, mustard seeds always goes in first, let it splatter/burst (there are reasons for this) then add other ingredients.
I would roast them along with the other spices and then add them to the mixer to create my curry paste.
Any objections?
The reason is simple if the mustard seeds does not splattered it will give a bitter taste
Its a South Indian recipe.good
hi, Why add rice & fenugreek seeds?
Hi Grace,m from Malaysia. We never include rice flour nor sugar in our Indian cooking, the curry paste is enough to thicken the curry .Btw I tried your asam pedas with stringray fish n it was awesome,tq for sharing.I've been following your page for awhile.
Indra Devi: OK to add anything to a dish...different people different flavors, doesn't have to stick to the original recipe, otherwise our world never changes and get stuck up....looks good to me this Grace recipe with pounded toasted rice and sugar in it..
I will be making this dish in Melbourne Australia
Sharon Parker I will be coming to your house
Same!!
I always cook fish head curry in Germany. I use baba's fish curry powder. What brand you are using?
Baba's fish curry powder is the best. I've tried many brands but Baba's is the best 😋

Hey, you can find it at most Asian grocers. Yeah, we are still working on many recipes through our request list. If you could also help us to request for fish curry powder on our site, that will help us to decide on which recipes to work on first :)

Yes, they are being tempered in oil :)
Thk u!!
Why never add coconut milk or yogurt?
Because it ain't needed Full recipe found here: www.nyonyacooking.com/recipes/fish-head-curry~HyPIdPjvf5-Q Coconut milk is not needed in all curries :)
I came, I saw, I conquered!
wa chef so pretty, confirm ho jiak
This one is the mamak version.. Didn't use santan btw
My family recipe is with coconut milk
Why not let the vegetables cook first in the curry before adding fish cuts for few minutes? That way you don't have to scoop out the fish cuts out and then adding them again later..
I think you forget to put salt n sugar
