everytime a video showcasing a michelin starred chef (or any chef infact) cooking up a dish for the crew always ends with people bashing the chef (and his plate). theres just no way of pleasing some of you people lol. i believe in order to judge anything, especially food....one has to have experienced it first. To me (as a chef) this is a piece of art on a plate. lets try to simmer down the negative comments, better yet, keep em to yourself.

I dont like food styling like peace of art to much in some cases. First think, what food have to be about is simply good piece of food. I cant eat sculpture or picture, so why art? Would you like to take this dish to the galery and just looking on it? :-) Too many intgredients, even chocolate brushing? That was moder 10-15 years ago. The beauty about food for me is taking few simple intgredient, make good size ( :-) ) of portion, take your chef knowledge and make the dish. Perfect food for me have to containt meat, souce, side dish, garnish and mixture of spices and herbs in smaller area. This is not bad, but for me is just 75% :-) what makes me irritated in this case is "crative" camera style. Thats jungle, that realy down the level of this dish.

It depends how you cook it... if you are frying it like a steak then perhaps... but if you are casseroling it like braised steak then it won't be. If you froze the venison before cooking it then it would kill any parasites. Do a google on venison and parasites. There are government health warnings in several countries about eating fresh venison.
