We all learned by spacing them far enough apart and making sure the topings touch the edges but don't make it look messy. That what's matters in simple terms, it doesn't need to be math it's food not fine dining. As long as the dough is good the pizza is good.
Very true they also don't use a pan to bake the pizzas in they use a sheet so idk what this guy though when he use a stupid pan plus his dough don't have the dust on it like the real papa johns pizzas does 😒😔🤦🏾♂️

They have a big table with "duster" a flour mix, it makes it a lot easier to work with. You use two hands one makes crust edge and other hand follows behind locking it in. we werent supossed to throw them up in the air you would go back and forth between hands in front of you while rotating to stretch it out. Also the cheese is like caviar sized balls instead of shredded . Oh and they use pizza screens instead of pans
You should try a mix of provolone and mozzarella cheeses in your pizzas. The different types of cheese give a richer and more satisfying flavor profile.

I believe PJ uses between at 50 to 55 percent water hydration, and a 5% to 15% oil hydration. I personally believe its around 62.5% total hydration max, possibly even less. I am thinking it could be less water and more oil, so more on the 50/15 side. I also believe they use a small amount of yeast. Their doughballs are very tight, firm and most certainly not wet. If we had to use a 1 day old dough it was next to impossible to stretch out completely, it was flat and it was not very tasty. Even 2 day old dough was noticeably different and difficult to form. It also sits for at least 3 days before its cooked. If its used before 3 days the difference is very noticeable. The fermentation matters. I worked at PJ for many years, and have just recently began to try to recreate their dough as it is my favorite outside of Pizza Hut's thin crust. My next test will be 57% water and 8% oil.

Great pizza great video. I make my home made doe and home made sauce every Saturday 400pm. I use the same ingredients you use except for brown surger! Got to try that this Saturday night. I use a can of tomatos and tomato sauce mix it well in the blender. I put in salt, pepper, garlic, Basil, parcely, oregano and chilies powder. Mix well! I use my hand to make the pizza circle. Add pizza sauce. The Mozzarella cheese and Provalone cheese. Hot Italian sausage and hot pepperoni and onion!!!!! I put it the oven under 425 for 10 to 12 min!!!! Take out and cut then EAT!!!!! I'M A QUARTER SICILIAN SO I LOVE ITALIAN FOOD.
Dont know how much different your papa johns is to the uk ones but when i had a papa johns i personally think they put aniseed in their sauce. Its got a very slight hint in there.

Do a godfathers but add extra yeast becuse it really brings out the pop in that pizza crust. No other brand pizza matches it. One Godfathers did this and that store was always packed. You had to wait to order a pizza, best crust best sauce . Hands down. It had more spices and herbs in it. With a nice rich thick tomato sauce that was chunky. Garlic and oragno flavors.
You don't have to bloom instant yeast it defeats the purpose of it being instant. You just dump it in. Seems silly to comment this 2 years after the fact but I just want to put that info out there. Same goes for active dry yeast you add both in with the dry ingredients. It is no muss no fuss.
I don't think it would make much of a difference. I believe there is about 2 1/4 teaspoons of yeast per packet. I always get the jar of yeast at the store, and that works for me.

They actually dust their dough with a mix of AP flour and semolina. It's a proprietary blend that is shipped to stores as "Dustinator".

Tip; add a quarter teaspoon of citric acid or lemon juice to the flour mixture and stand back from the blooming dough...
