When cutting cakes in half as layers, move the cake around on a turntable. Let the knife go in and just move it in an inch at a time as you turn it. It will get through to the middle and separate.

One suggestion in addition to the observations you already made: When finishing with a mirror glaze, try using a cake board that is a bit smaller than the cake itself. Then prop it on something stable, such as a wide cylinder, that is several inches smaller (I use a straight-sided Pyrex storage dish). When the bottom layer is a tender cake, even if it's frozen it's very helpful to have it on a cake board.

Happy birthday! Before putting the cake batter in the oven, don’t shake it!! Be super gentle with it, you want to keep the foam bubbles in. I got so panicked when you shook it 😅😅
A piping bag would be much easier for the barrier layer and any other work on a cake. Even with the pastry cream, build a barrier around the edge, fill in with more pastry cream. Usually pastry cream has whipped cream in it.
Pastry cream (crème pâtissière) does not have whipped cream in it. If you combine pastry cream and whipped cream, you get crème légère, which can be used for many of the same applications when a lighter texture and flavor are desired.
