Josh you're among the few who have encouraged me to COOK for our guests as opposed to ordering in or taking them out- which actually helps me a great deal, being an introvert- I SO prefer to be BUSY while we have guests, it gives me something to DO while we chat, and I have a built-in excuse to leave to "tend to" something. Brunch is my favourite meal, and there is no greater heaven for an introvert foodie than to envelop yourself in making a mid morning feast
Where I live we have kitchen parties because we cook so much all the people go hang out in the kicthen
My friends and I made this today. It was amazing! The potatoes were spicy and seasoned beautifully, the eggs Benedict was… divine, and the crepes were out of this world!!!

Just made all of this (minus the beermosa) for a New Year's Day brunch at my grandmother's house, and it was fantastic. One addition I made that came out really great was folding in about 1/3 cup of creamy peanut butter in with the cinnamon whipped cream, and the peanut flavor combined with the brulee banana was awesome. Great recipes, was my first time making English muffins and those came out really good.

It's nice to start the day with a nice breakfast especially one you've actually made. But there is nothing wrong with a fast food order when you're too tired.
I make crepes and keep half of the quantity in the fridge and half in the freezer. Serve with jam or honey or omit sugar from the batter and make it savoury with ham and cheese.
English muffins are freezable too I'm guessing.

I made this today for the wife and I. Thank you for the Thermos tip, that really helped my Hollandaise game. Here's another tip for you Papa lovers out there: Don't fill the crepes too much with filling. I ended up making what would essentially be French Tacos, overfilling the crepes. Delicious, but too much to finish. I think I'm going to be using that English muffin recipe for the rest of my life, holy breakfast bread Batman, so delicious.

Hi! I'm from Argentina, my original language is spanish. Sometimes I don't realize how important can be a person from the other part of the world in a person's life.
Three months ago, I've moved with my boyfriend. In that moment, I met your channel. We have a deal in wich I'm in charge of doing food, and I did know how to cook, but your channel just gives me so many ideas for the days that I want to do something special, something different, and even with my every-day meals. I have almost every video that I saw from your channel in a list to -someday-, and also we tasted a lot of your recipes, I think three or four. Your idea of kitchen it's impecable and I hope someday I can have a kitchen so well prepared as yours. As I said, we only living here for three months, so I don't have all the kitchen tools that I would need. Even tho, in addition to the recipes, you teach us the importants of the kitchen, how to take care of a thing, how to make it and WHY. If some other guy would tell me that I have to do this many extra steps just because I wouldn't do it, but you take care of why we should do it (speceally in But Better).

You do know that the majority of farmers market sellers resell their products either bought from your local store or from another larger company. There are very very few people who grow their own stuff and sell it locally any more.
The best way to check is the boxes they have their products in, Check the trash near by, Check all of the fruit for stickers and ask. Then ask to visit their farm, As for photos of their farm on their phone in their photos. Just keep asking.
@@kameljoe21 yeah I saw a very well done CBC video from 2017 about that. Thankfully my local markets are forbidden by law from doing such a thing. It also helps that we don't have a giant food distribution center nearby.
@@Biofuel11 That is great. I have watched a lot of those CBC videos. We were in Colorado Springs a couple of years ago and we stopped at their farmers market and you could see right off hand that they were are resold items.
I am glad that your area does not allow them to do that. I think Canada has been cracking down on that yet I do not know by how much.
Though I would suggest to Josh to maybe visit a farm that does more than a few crops and make something from what they grow.

If you do this regularly and get the tools&ingredients, price goes down after long time. Eventually you will have all the tools and most of the ingredients in your kitchen anyways. Saving money costs money!

How to have brunch, but cheaper: start making everything the day before.
Lol seriously, everything here seems simple and quick but roasting potatoes takes about an hour, letting the flour rise for the english muffins is another hour, making the individual poached eggs takes forever the crepes too and then the difference in temperature between the plates must be very jarring because some of the food is fresh and some of it has been sitting there forever lol
Part of what you pay for in a restaurant is to have everything fresh and hot and all you have to do is sit there while you get it served to you. Brunch is expensive, but like we just saw, it's a lot of work and that's not even taking into account everything you have to wash afterwards
@@angelacuebasmercado4036 You know you can just make any of these dishes individually and still have a grand old time, right? Or get help and divide the labour bewteen people.
The english muffins can also be prepared the day before, so you just have to make the eggs, ham and hollondaise on the day you actually make it and none of them require much input, bar taking your time for the eggs, ofc, but you literally just drop them into your whirlpool and let them cook.
The hash is literally just chopping veggies, seasoning and popping them under a broiler. If you time it correctly you can have it ready when the other dishes are ready, it just takes proper planning, which takes experience, which you build up by cooking more yourself.

@@seqka711 in the netherlands we eat "pannenkoeken", literally translated to pancookies. They're the best. Leave the batter a little thiccer than a crépe, add a nice amount of butter and fry the edges a little longer than you think is right, and you've got the most delicious meal of all time.

For mimosas, use a Cava instead of a Prosecco! The bubbles are softer (aged in barrels as opposed to steel barrels). It tastes better imo and is cheaper.

You can make mimosas using a cheap prosecco if so inclined. You can get a decent bottle for around 10 dollars or so, a good bottle for >15ish. The quality of flavor isn't massive, but the price difference is, good champagne is like 2-3x the price(though, the flavor profiles are a fair bit different). This is generally what I do for any cocktail which calls for champagne. You can even use cheap ass sparkling wine, it wont taste as good, but it'll do the job. Beermosas are delicious though, do recommend.

My partner and I cooked brunch together for a quarantine date night. We did eggs benny, bacon, shredded hashbrowns, and waffles with strawberry compote. I think the ingredients came out to $30ish total and there was easily enough to feed 4 people. We even used Canadian bacon for the Benny
Looks amazing Josh, just wondering how you can time everything so that it all comes out nice and hot without it having it go cold and stale. A lot of the timing seems challenging
Crepes can be made ahead and they microwave very nicely. Those potatoes could be held on the stove over low heat almost indefinitely. It's the benedict that would need to be ready at the last moment since it's all over if that sauce congeals.
As a younger man, I flirted with culinary school. But I quickly found that a ton of what you learn is about space/time management in the kitchen. My takeaway was that while I love cooking, a restaurant kitchen was going to strip away a lot of my fun.
Morr to your question, whenever I approach a multi-part meal, I do each component individually, on it's own, and I use the stopwatch on my phone to get an idea of how long each stage takes me, and how long I wait before moving to the next stage. It helps me put everything together when I do the main event. I suspect that professionally-trained chefs do something similar innately, and just know that it takes X long to poach an egg and Y minutes to crack out a Hollandaise sauce.

Just made the crêpes at home and oh my god they’re so good. You gotta use a good torch bc the broiler turned the remaining bananas into mush.
I had a weak torch and used it on one banana and it took forever so that’s how I know it has to be powerful. That’s also how I know a “good broiler” might take even longer and mess up their texture a bit if you’re expecting an intact banana.

1) what would you say to drops of warm bacon grease (from the fridge, of course) on the potatoes? That way bacon does not boost costs, and one has utilized something from the pantry, which equals nearly free-especially since bacon grease is “garbage” to many?
2) I can not recall if you have done an episode on a great daily pantry, or one on freezing stuff the best ways, as well as what one should not freeze-or make it differently, freeze, and add the missing elements later… Just thoughts that came as I watched the costs manifest on the screen. Your costs are based upon what some would consider bulk pricing. Many people buy small packages of things, and do not actually keep a pantry. That way is far more expensive. Even produce tends to cost a lot more per # when buying one item at a time.
A lot of people don’t know how to put together a good pantry, and some do, but they live alone or with one person, like you.

You should try the crêpes with caramel au beurre salé (salted butter caramel), super easy to make at home! That video is amazing.
