    Popeye’s Famous Fried Chicken Recipe
    Ingredients:
    Chicken Marinade:
    10 Pieces Chicken Legs and Thighs
    1) ½ quart whole buttermilk- full fat to marinate the chicken
    2) 1 cup Louisiana chipotle sauce or hot sauce
    3) 2 tablespoons Kosher salt
    4) 2 tablespoons annatto Oil
    5) 1 tablespoon dried dill
    Spice Mixture:
    1) ½ tablespoons Coleman's Dry Mustard Powder
    2) ½ tablespoon Onion powder
    3) ½ tablespoon Garlic Powder
    4) ½ tablespoon Turmeric
    5) 1 ½ tablespoon Cayenne pepper
    6) ½ tablespoon Paprika
    7) ½ tablespoon Cumin
    8) ½ tablespoon Accent (MSG)
    9) 1 ½ tablespoon White pepper
    10) ½ tablespoon Kosher salt
    11) ½ tablespoon Celery Salt
    12) 1 tablespoon Sugar
    Batter Mixture:
    1) 1 cup All-purpose flour
    2) 1 cup Cornstarch
    3) 1 teaspoon Baking soda
    4) ½ Spice mixture from the above list
    Egg Mix:
    3 eggs
    1/4 cup water
    1/4 tbsp cayenne
    To Marinate the Chicken:
    In a large plastic bowl with a tight-fitting lid, combine buttermilk, Tabasco sauce, Annatto Oil, dried dillweed, and kosher salt with a small whisk. Add the cut-up pieces legs and thighs of a chicken to the large plastic bowl making sure to submerge the chicken in the mixture completely. Refrigerate 12-24 hours for the best results. Pour off the chicken marinade, shake off excess buttermilk mixture from the chicken. Do not rinse the chicken.
    To season the chicken:
    In a small bowl, combine all the spices. Use ½ of seasoning to generously season both sides of the cut-up whole chicken. Then reserve ½ seasoning for the dredge mixture below.
    To batter the chicken:
    Combine all-purpose flour, 3/4 of a cup of cornstarch, one teaspoon of baking soda, and the rest of the spice mixture from above. Coat the chicken in the seasoned flour. In a medium glass dish, combine three eggs, 3 tablespoons of water, and 1/4 tablespoon of cayenne pepper. Dunk each piece of the coated chicken into the egg mixture and then shake off the excess egg mixture. Coat each piece once more.

    Tried this recipe, the breading didnt come out any where near what popeyes tastes like but let me tell you, ITS BETTER! Great job!

      I concur. I used skinless, boneless thighs and the breading didn’t resemble Popeyes at all but I don’t care because the taste was amazing!! I omitted hot sauce and added pickle juice to the buttermilk brine and allowed it to marinate overnight. This chicken was so juicy and seasoned w/ a kick! The finished product needed no sauce! It was that moist and flavorful. Just a little mayo on a bun and pickles for garnish. It’s really better than Popeyes. I think I’ll have better luck with skin on.

      Hahahaha. Amazon comment is funny. Yes. Go to Mexican or asian grocery. Get Annatto seeds and put some oil in a bowl and add that seed. Keep aside for day or two. U got annatto oil. Cheap. Lol.

    So I just tried this recipe because popeyes is my favorite fried chicken spot. The texture was wrong because I'm sure I used the incorrect oil or had temp issues. The flavor was not quite like popeyes either. That being said.... BEST FRIED CHICKEN I've ever made. This is my new go to for chicken recipes. Cant wait to try for chicken tenders or a chicken sandwich

    Trying it tonight. Just got the marinade going and trying a mixture of Canola oil and paprika as a sub for the annatto (never heard of it, people at my local Arkansas Grocery Store never heard of it, but Google says this is an optional sub)

    Great video but I'd like to know how much and what kind of oil do you use. How long do you fry the chicken? What temperature is the oil? Somehow I missed you mentioning this. I need to find a way to do this in an hour or so. It might not be quite as good but....Any idea if an air fryer works?

    I tried to recipe but it didn’t came out looking like that. The chicken started to get dark quickly and crust fell off while frying and the oil became very frothy. I tried using a different oil and the same thing happened. I’m thinking maybe it’s the baking soda. However the taste was amazing. Any suggestions because I really liked the taste.

      Sounds like your oil is not hot enough

      I played round with this. I mixed the egg in the flour for coating and made it into a batter for coating. That way it doesn't get weird and too thick that it falls off. If you make into a batter you get the crunch look without it falling off.

      The color I believe. It gives that yellow hint of color. Also it has a unique flavor.

    I like a little heat but 1 1/2 tbsp of cayenne pepper is way too much for me! I love Popeyes but I only ever get the mild chicken. I would only use a fraction of the cayenne and I use Frank’s Red Hot with buttermilk for my marinade.

    Fried chicken is literally one of the hardest things to master. Popeyes got their recipe from the same ppl who brought us the pyramids. Your chicken looks awesome!

      @@manifesting.inner.g my skin always lacks flavor and never a good skin to meat ratio. The wife and mother in law failed too. Buttermilk and flour both bland. I got a bunch of vacation stacked up, I'll experiment next year for sure. The next 6 months I have to shed these covid lbs and fried chicken taste testing won't do me any favors.

    Fantastic recipe. I have only ONE suggestion....sprinkle some coarse black pepper before applying the olive oil with spray....sorry 2. Use canola oil instead. Olive oil has a taste, canola doesn't. Thank you.

    Hello! Do you need to add the hot sauce? I prefer less spicy food but if you need to add it I totally understand!
