I now for a fact that chicken is going to drier than a rubber band, one chef to another if you think you need more time to Cooke the gravy just remove the chicken after cooking it for 10-15 minutes and then add it back and simmer for 5 to 10 minutes then chicken will absorb all the flavours and won't dry up.
