The longer the bananas preserved, the more SUGAR it produces..meaning the amount of sugar contents become significantly over time and very unhealthy for the body. Longer preserved bananas means MORE SUGAR and less potassium. The best HEALTHIEST WAY to eat bananas is when NEWLY ripened, meaning less sugar and more potassium.
We have to start question what is the sense to live in cities and have a lifestyle where we don’ have time to eat well, grow our food, spend time with our children because we need to rush, rush, rush. What’s for? People like this family get much bigger sense of connection with what really matters. I am from Brazil. Beautiful to watch your videos!

OMG! One tough woman! I must say how utterly amazed I am that she took the boiling jar of bananas out of the pot and then took away the boiling water kettle. All by hand. Literally. WOW! Not to mention, send that woman a tea strainer!
I was wondering how high above sea level they are - as the higher up you go, water will boil at a lower temperature than at sea level. So while we might be concerned that she is handling something at 100C/212F that might not be the case. It might still be very hot, but not as superhuman as it looks. lol.

I appreciate your video and I love seeing the practices of other cultures. I believe cultures can learn from each other. There is one thing that concerns me a bit though. "Water-bath" canning bananas is a little dangerous due to the risk of botulism. Foods with a pH below 4.6 are safe to can in that manner, but bananas have a pH of around 5, which isn't quite acidic enough. It might be safer to lower the pH a bit by making it a little more acidic. Maybe combining the bananas with a fruit with a lower pH, such as apples, could make it safer, or possibly canning them in the juice of another fruit with a lower pH. I grew up on a farm in Oklahoma and grew up canning food (and still do). I am merely another home canner, not a food scientist; however, here in the US we have food guidelines for safely canning foods, which is how I know about the pH levels in canning. If you would like to find out more info about it you can probably find it at the USDA website or a Ball Home Canning book. Love your video though. Your children and puppy are adorable. Is the puppy a Great Pyrenees? It looks like one.

I had the same concerns because bananas are not as acidic to use the water bath method. But if this is their tried and true method, must be ok.
I am 75 years old. It occurs to me that people in less 'modern' countries have no pressure cookers and can things that North Americans stopped canning years ago. Have we been sold 'a bill of goods' in order to make us BUY the things we used to can because someone can make money on selling it to us? I think we have been fed lies to make us fear canning food ourselves.
