Lemon Cheesecake Mousse - A light, less-sweet dessert that needs no cooking or baking! EASY!

- Lemon Cheesecake Mousse
2 cups heavy cream
8 ounces cream cheese, softened to room temperature
1/2 cup powdered sugar
1 cup lemon curd
1/2 teaspoon lemon extract
pinch of salt
yellow food coloring, optional
In a chilled mixing bowl, whip the cream for 2 to 3 minutes until stiff peaks form.
In a second bowl, mix the cream cheese, powdered sugar, lemon curd, lemon extract, and salt. Fold  the whipped cream into this being careful not to deflate. Add a few drops of the food coloring, if you are using it, and gently fold it in until it is evenly dispersed.
You can divide the mousse into serving glasses, or place it in a bowl to be served later. Refrigerate for at least one hour so that the mousse will chill and firm up. Serve cold.

Only 27 years on your kitchen aid? I've have one from 1938 that belonged to my Aunt, one from 1965 that was my mom's, and my own from 1987. At Christmas I push my kitchen table closer to the wall and get them all rockin' and rollin' with cookie dough for cookies and other Christmas treats.
Whoops, the mousse looks delicious. I think I'll try it this week.

I'm also from PA and made this today. I thought the lemon curd was so sweet, I left out the sugar. It's good, but I thought it was too much whipped cream. The next time I make it I'm going to cut back to 1 and a half cups of whipping cream and see how that goes.
I giggle every time I see Melissa’s hand come into frame to lock the mixer.
She takes good care of me. LOL!

@@tomwyant9297 I got the bowl lift kind after asking my friends about what they had the most trouble with. They all said forgetting to lock it.
Tom, try folding with a whisk.
Just put the whisk in, lift up and let the mousse gently drop out of it, keep doing that until incorporated.

I make a Mountain Dew salad. It has a lemon jello bottom with pineapple and bananas in it. Then marshmallows and topped with that mouse. It’s so delicious. My mom used to make it at Easter all the time. I made it for lots of holidays 😂

This would be a good BBQ dessert in a Graham cracker pie shell, or even piped into the individual tart shells they sell.
Gel food coloring is a game changer. Beautiful colors without diluting or changing the flavor.

CURD is so easy to make. I make a mandarin curd that is to die for. I make this in a graham pie shell with extra curd on top of that base then top with more whip cream or cool whip.❤ Yum

You can also use a baggie with one corner snipped off to the size that you want. Fill the baggie and squeeze, then throw the baggie away and you don't have to clean the baggie either. Now to join a gym to loose some of this weight that these delicious recipes gave me. LOL

I make curd from scratch with allulose to keep it keto. Make orange, lemon and pink grapefruit... they are all good.

Years ago my sister brought an appetizer to a party we had. She brought a package of crackers that weren’t easily breakable. Smeared chutter cheese on each cracker, and topped each with a dollop of lemon curd. They were delicious! It’s a bit hard to find chutter cheese. Sometimes I find it at the holidays. Cream cheese can be substituted, but chutter cheese is better. It’s an original cheese called Herkimer cheese, or that’s where you can buy it. It’s spreadable and tangy, as they describe it.
