I’m confused because according to USDA pork ribs should be done at 198 to 203 degrees F. But yours was done at 145 degrees F. What’s wrong with this picture?
Per USDA "Cook pork, roasts, and chops to 145 ºF as measured with a food thermometer before removing meat from the heat source, with a three-minute rest time before carving or consuming. This will result in a product that is both safe and at its best quality-juicy and tender." www.usda.gov/media/blog/2011/05/25/cooking-meat-check-new-recommended-temperatures Lately though I've been just going with 165F for all meat to keep it simple.
