Thanks. I like the idea of a wine I can use for cooking and drinking -- at the same time. There seems to be quite a few brands to choose from. Using sherry is an interesting idea, but I wonder if the alcohol burns off.
Yes I tried stir frying with sweet cream sherry and it worked similar to shaoxing wine, added it toward the end of the cooking process, there remains a slightly sweetened flavor but nothing overpowering. Shaoxing had a different flavor, more malty I suppose.
