- Making homemade butter is strikingly easy. All you need is a food processor, 2 ingredients, and you're good to go. Oh and of course you can be extra like me and smoke your butter for some more interesting flavors. Smoked, cultured, homemade butter. You just can't say no to that. Especially if it's just barely melting over a nice piece of sourdough bread or an english muffin. Yeah...I like dat.

Ingredients you'll need:
1qt (946ml) heavy cream (low temp pasteurized)
3.5 tablespoons (51ml) cultured buttermilk
eventually he'll make his own flour from home grown wheat
Already has the mill in his kitchen
Puffel Eventually he'll be making his own cookware and knives with someone else selling them for him.
Be careful what you wish for...

Every time buttermilk is mentioned in a recipe, I get utterly confused. There is no such product where I live!
Its tastes like sour thick milk. If you have yogurt you can use a tbsp of cultured yogurt to the heavy cream or for quick cake or muffin recipes add 1 tbsp vinegar or lemon juice to 1 cup whole milk. Stir gently and Let sit 10 minutes. It will curdle and create a buttermilk substitute for baking.
Vi where do you live? You can make it in some minutes at home: just mix some lemon juice and milk and let it sit for some time.

This came out amazing! I'm never buying butter again! 2 tablespoons of buttermilk in a pint of cream is the perfect ratio for me, and it legit made me about a week's worth of the best butter I've ever had. All hail Joshua for his sage advice lmao

Made this and sandwiched the butter between 2 pieces of kombu. Results were quite good! And this is a super easy technique to make butter.
2 1/2 cups cream
1 cup of quality sour cream
Pour into mixing bowl, whisk together, then use the mixer until it’s fluffy.
If adding salt, and while using mixer.
Tastes exactly like Breakstone’s.
Which, at least in the northeast, is the last major brand that has the buttery taste.
If you’re in upstate NY or VT, Stewart’s Shops has a very delicious private label butter.

My granny used to make fresh butter every night for us to eat in the morning... she used to use whole milk and add a little bit of curd in a bottle and shake the living hell out of it!.... fresh butter tastes sooooooooo good!

Hey, love your channel and I would like to try the butter, but I do not have easy access to buy buttermilk. Can I substitute it with yoghurt or I should look for cultures?
Stefan Gatu you can use milk kefir if that’s easier to find. Not sure if yogurt is the right culture you need
You technically could use yogurt. You would just be adding extra cultures that are not typically used in making cultured buttermilk or cultured butter.

I've made cultured butter with Greek yogurt, and it worked perfectly. I just added an individual yogurt cup to a quart of heavy whipping cream. The cream was ultra-pasterized, too, so that's not a problem if that's all you can find.
At the point that you add salt can you add garlic or herbs or something to make it a compound butter?

Bread has just had it's 30,000 birthday, but everyone forgot. So how old is butter we of tales of the silk road and camels and horses churning up the goats milk or yak milk turning into cream and cheese and the in-between years of making of early butter products for sale. It's like that, what comes first, the chicken or the egg and if your not an idiot, it's the egg that mutated and changed just one thing to another just over time changing again and so on. Making butter or do it the simple way, thick cream(heavy )and half a teaspoon of salt or leave the salt out. You will know when the butter leaves behind the whey milk or buttermilk and then ice cubes with a bowl of water and squeeze the butter until the buttermilk has gone when then water is clear you may have to do this a few times, pat dry with paper towels cooking paper using wooden spoons because the heat of your hands will make it harder and your start to get melted butter pat into any shape or small blocks or one large block or two and freeze it keeps up to six months. You can before you freeze it add herbs and spices of tarragon, basal, chilli, chives, garlic all chopped up in small pieces and mixed through the butter in small blocks so a different flavor for a different day. I have heard of people putting sun dry tomatoes and olives or capers and ground truffle that pigs and dogs are trained to find, remember these two item's salt and heavy cream or double cream just whip it up and you have got butter in 30/40 minutes

Made this earlier this week-was a little dubious right when I finished, but after wrapped in the fridge for a day tried and was AMAZING. And yeah, super easy. Hardest part is cleaning the food processor (because of the crannies in the top, not because of the butter). Used some to baste a steak like he does in some of his other videos and butter the veggies and some bread with it-great meal!

i was thinking the same thing. I would say so, get a sort of mother batch of buttermilk going like in a sourdough....dough?
SAVE THAT BUTTERMILK before going to the adding water stage. You can now use that buttermilk to culture more cream or RAW milk. it will keep for 2 weeks in the fridge drink it bake with it give it to the cat. If you can get raw cow's milk don't set it in the fridge just yet pour out 1 quart and set it on the counter to make clabbered milk... you now have a culture = CULTURED BUTTER and CULTURED BUTTER MILK... you are welcome! Repeat what Josh did and keep it going and going... always save from the newest batch to add to the newest batch... tah dah!

You don't need one. Just beat it in a mason jar and you will have the same results. It just takes loner than in a food processor

How much is an hour of your time worth? Consider how long it would take to make this butter - plus all the materials you would need - then put a price on it. I am pretty sure the most expensive artisan butter, whether bought in the supermarket or online, wouldn’t be half as expensive. Just sayin’.

I culture cream on a regular basis but always use plain yogurt instead of buttermilk.I haven't made butter out of the cultured cream YET,I simply didn't know it was possible.But now this little video has changed all that so I'll be having my own butter in the house.I must thank this fellow for shining some light on the subject!
