      @@imaspecialgirllalala I guess you can create them by separating a correctly mixed batter in two, dyeing one of them and partially mixing them. It might achieve the right texture and the cool pattern

    I went through culinary college and I still never got taught how to troubleshoot when baked goods fail. I'm learning more now than they ever taught me

      ⁠@@recoveringsoul755It’s not just about the height. It’s also about the texture of the muffins. The distribution of the leaveners and the number of times you mix the batter are the steps you need to take into account for the right texture so its not too gummy or dense.

      Hahaha I litteraly just just just commented the EXAACT same ! Haha “ Aaaaah thaaat’s why they always say to mix the Dry ingredients together first! Makes sense !” Haha and then I see yours which says it exactly including the “ Makes sense “ part! Haha!

    Genius move using the food coloring to visualize the baking powder! Your videos really help a lot with understanding *why* to do certain things when baking, which I feel a lot of other channels don’t do enough

      Totally sending this to my (15 yr.o) daughter... I DID tell her about dry ingredients... and she still thinks it's an unnecessary step sometimes. I think she does it just to taunt me 😂

    I love this explanation. I read “do not overmix” often, but I never get a solid explanation of when to stop mixing. This helps so much.

    When i started getting into baking, the first thing my grandmother taught me was "mix the dry ingredients, then the wet, then mix both together." no better way to do it, fr, it makes it so simple

    Could you show the third one (perfectly mixed) with food dye? To see how it's supposed to look like both in batter form and in baked form?

      The dye shows the amount of the leavening agent that isn’t activated, which makes the final result more dense as it does not rise enough. You wouldn’t see any coloring in the well mixed one because there isn’t any inactive leavening agent, lol. As for the batter, he said to mix the dry batter throughly (until homogenous), add the wet batter, and mix until there aren’t any dry streaks.

    Man. The last bakery I worked at, I trained so many people who seemed to think mixing the dry ingredients was optional. I’d turn them loose and let them make a batch themselves, and a lot of the time they’d get undermined products at the end. I’d ask them if they mixed the fry ingredients together, and they’d either lie and say yes, or they’d get annoyed like I was being a micro manager. Then I’d watch them try to do it all over again…

    Aaaaah I understand why now . When I bake cookies I always make them perfectly because I stop mixing asap even when there is some flour . With muffins it’s so different ! Thank you

    You rock kiddo.. you have helped me so much..it's been years since I've baked. Over 13yrs! My son's grew up and left the nest and I quit baking..I loved cooking and baking, but not for one..now I am a caregiver for elderly veterans and my desire to bake has returned. However there are important things you forget if you don't practice steadily..that's where you have jogged the hamster in the wheel..now my bakes come out perfectly! Thank you for putting smiles on the vets I bake for! 😊

    I really like how he shows us the Uber mixed and the regular amount mixed and show us if you're baked goods end up this way, there was a problem and this is probably what occurred.It's really informative and helpfulI

    That makes perfect sense! No wonder my muffins turn out so gummy! I’ve been adding the dry ingredients to the wet instead of the wet to the dry!😮

    you have made certain principles more clear than any professor I had…
