  • On this video, I cooked up some savory smoked carnitas. I used the carnitas to make some tacos that were packed with so much flavor. This was a super simple cook that only took 5 hours at 250 degrees on my Yoder Frontiersman.

    1 tbsp oregano
    1/4 cup salt
    1/4 cup black pepper
    1 tbsp garlic
    1 tbsp cumin
    1/2 cup smoked paprika

    Just made 8lbs of this on the Weber Kettle. Was afraid of going with a strong smoke so I used apple wood with the Minion method. 3 hours on the grates, followed by 2 hours in the pan. It came out great. Even the onions were tasty. Hardest part was cutting away the bone.
    Handy tip - any chunks of meat that are too small to match the big hunks can be used to feed the chef.

    Thanks man! Lived in Colorado for 35yrs, plenty of amazing Mexican, Tex-Mex places to eat. Moved to Georgia, even though there is a heavy Latino population here, the food SUCKS!! Nobody here knows what Green Chili is!!! Good thing i know how to make an amazing Green Chili stew! Now I have an amazing recipe for pork Carnitas!! Cheers!!

    Fantastic! I am wondering, when I try this, I might use the juice of 3 or 4 limes and a couple oranges when the pork gets wrapped. Citrus is often used in carnitas recipes. Great video!

    My wife owns a Mexican restaurant and when I smoke meat for her so she can do barbecue tacos and nachos she takes the bones and puts them in her soups. Sometimes she’ll take some of my drippings and put in her Carnitas. Definitely gives it a unique flavor.

    Duuuuuuude...that’s awesome! Did the fat render in the pan, and sort of “confit” or fry the carnitas?
    A lot of taquerias around here fry their carnitas in pork lard. But seasoning/smoking them first is next level. 👍🏼🇺🇸🐷

    Thinking of doing something like this for my kids' youth group this Sunday. I need to prep ahead. I may smoke the pork for ~3 hours and take off the smoker. I can then finish it up in a Crock-Pot and pull the pork apart before serving. I'm worried about the pork getting too dry if I cook it all ahead of time and then reheat in a Crock-Pot. Thoughts?

    I use this recipe on my Traeger because I don’t have a wood smoker. Occasionally the carnitas are a bit dry but I cook them the same time and temperature every time. I know the Traeger cooks a bit differently so I’m wondering if you have any tips for using this recipe on a pellet smoker? Thanks!

    I made this this past weekend and they came out great! However, they were a bit tough to pull and a bit dry. I smoked the 3 hours unwrapped and 2.5-3 hours wrapped. Any thoughts or suggestions? Thanks!

    At 0:26 you said you have two pork shoulders. But at 10:15 you say the flavor profile is different than if you were doing a pork shoulder. Did you smoke shoulders or a different cut?

    In Iowa you leave the bone in for flavor! Or at least that is what I was told.
