Update: I did make this last night. It was delicious and easy to make (if you’ve got a decent mandolin). It was a bit tricky to figure the oven temperature and timing to achieve an even golden brown potato layer without the edges burning. didn’t think I’d be impressed with potato pizza, but I’m totally making this for dinner tonight. It looks amazing and simple to make; there’s no better combination.

Your unconventional pizzas inspired me to make one for lunch today! I shaped some rice into a disk, crisped it up on both sides, and put tomato sauce, cheese, and sauteed mushrooms with garlic on top! It was so good!
This looks amazing! And using the salad spinner to dry the grated potatoes is brilliant! Although…any video without the eggshells with cute faces and the Killer Spatula makes me a bit sad.

Love this video ! I had a BUMPER crop of Mn Midget and Hale's best last year, the former I'd started from seed. I had them outside, on a low trellis, but much of the plants ( which I didn't really prune, not knowing to other than the obvious pinching off of extra here and there as we were drawing near to frost). For those on thr ground, I placed bricks under them to keep them from starting to rot from holding moisture underneath them on the ground, even when on some woody mulch it seems to matter, although that's better than straw, bare soil, or plastic typically. On the bricks, they retained really good rind health to full ripeness ! I wasn't very experienced with melons, so tried hard to apply the "how to tell when ripe" advice out there, which I found MUCH easier - and accurate - to do with melons vrs. watermelon. With the varieties I had, anyways, they did become a bit orangey-yellow colored under the rind, slightly soft on blossom end, and pressing it releases slightly the ripe melon scent. Plus, for more modern varieties, them slipping easily from the stem when ripe was usually the case. This year, I am super excitedly growing the Petit Gris de Rennes, Emerald Gem, Nior de Carmine ( I think is the name..), and as I ended up with extra open spaces, later also planted some of my saved seeds from the cantaloupe last year. I know they would have likely crossed, but am fine with that. I DO want to eventually keep some varieties separate to save pure seed from, and do some crosses on purpose. Lastly.... I don't even like eating musk-melon/cantaloupes !!! I have always hated it, but the scent was growing on my, the few times I've grown them for husband. With the big harvest last year, and few chances to just give many of the extra away, I looked into freezing them for use in smoothies or something, out of desperation to find a way to preserve them that Hubby, at least, may like. Lo and behold - I LOVE smoothies made w frozen chunks of cantaloupe, some concentrated orange juice and some type of milk or yogurt, preferably a creamy one. I also added splashes of vanilla and occasionally, a pinch of ginger or other spice or herb ! AMAZING !!! So, this has got me excited for myself, growing these fan-favorites, this year. But apparently MN Midget stacks up well :) ! Good for them, my neighbors ( Minnesota). It's a GREAT variety for colder climate, shorter season folks to try, that's for sure !
