Madam i am a big fan of your khasta recipe. I make with haldiram moong dal fried namkeen and they turn out puffed and yummy. Thankyou mam for such a nice and doable recipe.

Thank you, for the recipe, Manjula! I used whole wheat flour/atta and it worked very well. I also tried it with maida, but I prefer it with atta. For the filling I also added some shredded raisins, which gave it a bit sweet taste. Thank you for the precise instructions! You are great!

Yes you can make kachori with different fillings. Potato filling will be very good only thing is when katchori are hot they will be crispy when they are cold, katchori will become soft. But you are the chef of your kitchen so try and let me know how they turn out.

I had some queries,If the filling is kept moist, and the dough soft then will it help in avoiding the kachori to crack while pressing it with palm of our hand? If it cracks what can be done to repair the damage?

Kachories freeze really well make sure don’t stack they should not stick to each other you can use wax pepper in between. Take them out as many you need and though before frying.
Thanx Didi for this nice recipe, Can I please leave a couple suggestions. 1- I add a little Sodi-bi-carb in the maida which makes it more 'Khasta' (crumbly or brittle) 2- While flattening the dough, I start pressing it from the centre outwards, which spreads the filling evenly inside the dumpling. I tried it with chola chana with some yogurt, Tamarind sauce and finely chopped onions and it tasted heavenly. Thanks for the recipe.

@dd9122 Puffing sometimes it needs practice, but not crispy i think heat was too high.

You do not need to soak the moong dal before grinding it water added after roasting is enough
