Just to let you know the whole thing: If you're looking for lots of lore and roleplay, your best POV's to watch are Shubble, Smajor and Mythical Sausage. Shelby more so, as she did the most lore, Scott coming in a close second. If you're looking for ocassional roleplay, then there's GeminiTay, Katherine Elizabeth, Joey Graceffa and fWhip. Minimalistic to almost none, then Lizzie, Solidarity, PearlescentMoon and PixlRiffs (although he didn't stay for the full series). Or no roleplay at all, your best bet is Smallishbeans. He did pretty much no roleplay at all, aside from when there were group events. I recommend Shubble's POV to start with. Or Scott. Either one works really.
This is a tough one because I felt like every single person on the server had such important parts in the lore. I loved every single Empire, but Mythical Sausage, Smajor, and Shubble should be on the top of the list as a lot of the lore centers around them. This one will want to make you watch everyone's POV. But if you want to see amazing mega builds (smallishBeans, Fwip, and Mythical sausage will give you so much inspiration to build.
Lizzie's ocean empire is so great. I love Empires SMP and its story arc, and watching how everyone's empire looks just shows how diverse your builds can be, depending on the biome you want to live in. Other pov's could be sausage and solidarity with their empires rivalry and different building styles. Also I enjoyed joeys jungle empire, his jungle temples are incredible and smallishbeans empire is mind-blowing.
i'd say to get the whole lore thing watching Scott, Sausage, Shubble and Gem is a must, tho everyone has their own unique lore bits which is why i eventually ended up watching all povs x) Empires SMP to me was the best thing that happened last year and i'm really excited to see your reactions :D
Joey Graceffa is on Empires, After Life and a couple others. He has a show called Escape The Night, which is amazing, on YT. Him and Lizzie have filmed some hilarious videos and CuteCraft is perfect to see. The houses they built on that were so cool

Oh, I haven't seen Lizzie's perspective! The two I have watched are Shubble and GeminiTay, and I _highly_ recommend both. Each person has their own lore that ties into an overarching story, and Shelby and Gem are both integral in their own way. From what I've observed, both Scott and Solidarity would be excellent choices to watch, as they're both very prominent figures to the arc and the lore. Smallishbeans is likely to be interesting for the builds, but for [spoiler] reasons, I feel like he would be the least interesting person to watch for the storyline. I know you're a fan of him so I won't blame you if you watch his perspective, but as a fan of the story he'd probably be my last choice.
I'll admit Empires is hard to only watch two POVs as everyone is doing their own thing, Empires wasn't intended to become the lore based SMP it did which you'll see in the early episodes. While there was small lore bits and conflicts the main lore came when Shubble joined the server (she and Joey joined late) and she came in with a character, backstory, and planned out lore which kind of jump started everyone else. If I were to try and recommend the bare minimum POVs it'd be Lizzie as she covers a lot of Joel's and Jimmy's stuff; Sausage as he covers fWhip, Gem, and Pearl; Scott because he's a main player in lore later on; and Shubble because she also does amazing lore and covers Joey and Katherine (a little). But i'll admit I would've waited until you finished 3rd and last life because that's a lot of content you're trying to go through right now. Also note that not everyone's episode number matches everyone else Sausage put out a lot of episodes quickly and like I said Shubble joins late. Also a small note because you bring it up often (and i don't blame you i'd love to see it as well) but there will never be a true villain on any of these servers. Scott talked in length about it on stream during Empires and while a lot of them wanted to do villain arcs and got close they could never fully cross that line. Because a lot of the creators were a part of Kingdomcraft where they did play villains and the fanbase sent a lot of hate and got really toxic. To the point that they all said they'd never play another server like that again, just so you don't get disappointed when you start seeing villain arcs form but they don't go anywhere. Anyway great reaction as always, so happy to see you getting into Empires!

I'm gonna watch this series along with you because I dropped watching this group of friends in the middle of X-life which is a different version of Onelife (Onelife was a great SMP especially its 2nd season), and came back thanks to Afterlife but so far this is reminding me of Kingdomcraft which was a factions SMP that had a similar concept
My favorite to watch was definetly Solidaritygaming (jimmy). He always had enemies in this serie, he is alot if fun and he dies aaalot 😅😂. Other than him i think sausage and joel is great picks to! 😁. Love that you are reacting to empires! 👏
You should react to Fwhip's perspective. He did some lore based stuff. Also all the players on Empires SMP are using the texture pack Fwhip created. Fwhip also has a lot of pranks that he set up and that other people played on him in retaliation.
FINALLY! lol Scott Holds most of the plot points for the series. The cod father or wfip are critical to understanding the cod and salmon wars. lol So I would go Scott, Shadow lady, and either wfip or the cod father jimmy. The others have some fun stuff going on too but it's not as critical to the story as a whole. The only other one I can think of would be the one pining for the bad guy but I don't like his voice when he talks normally. It's just so posh girl and frankly that kind of voice grates on my nerves. I'm only tolerating it in after life because of shulk, voice funny and fitting.

Fwhip is also a really good pov to watch. Very chaotic, he gets involved with some of the lore and he's really good at building!
