I might be missing something, but it seems claiming mileage makes a lot more business sense. Let's say you make $30 and drive 40km per hour on average. At current mileage rate of 95 cents per km, you could claim expense of $38, which means you're making a loss on paper and completely avoid tax. Even if you only drive 20km per hour, you only pay tax on $11 of $30. I'm not an UberEATS driver so my estimates might be completely off here.
in portugal they ask for the booklet/registration certificate of the motorcycle front and back plus the motorcycle insurance. Can I submit documents on behalf of someone else? for example the motorcycle is in my father's name and the insurance is also and do they approve?? Please if you know and you can help me it was great !

I'm sure you need to register in your name they will ask for proof of insurance which is show your name on the insurance policy
