👍✌ That is amazing. I have never cured my own ham. This is a game changer. I am going to have to look into a cold smoker. Total control over how your meat taste. And never made my own bacon. I always end up doing a whole pork belle, Crispey when I cut into it to make squares of juicy crunchy to die for. But now I have to try and hold off and make bacon out of the same cut of meat. Tomorrow my quest for a good cold smoker. ✌👍

And now I understand the temp from the extremely slow embers of pellets burning. The only temps are the ambient air. And don't smoke on a 100F day. LOL and I found plenty of locations that sell bags of real fruit tree wood. again thank you

That ham reminded me of my grandfather ham. We lived in the country and he had a smokehouse that he built. He raised hogs and smoked his own meat.

You can if have no choice, but try a pellet cold smoke unit first they are like 19 bucks
