  • TOCINO
    Ingredients:
    MEAT:
    1000g Pork pigue or kasim without skin,boneless
    and sliced ¼ inch thick
    CURING MIX SEASONING
    1 TBSP refined salt 1 cup sugar
    ½ tsp curing salt 1tbsp garlic chopped
    1tsp phosphate 2 tbsp anisado wine
    ¼ tsp vitamin C powder ¼ cup pineapple juice
    ¼ cup chilled water ½ tsp MSG
    ½ tsp meat enhancer
    1 tsp meat tenderizer
    ½ tsp meaty ginisa
    EXTENDERS:
    1 tbsp isolate
    1 tsp carrageenan
    ¼c to ½ cup water, chilled.
    NOTE:
    •Garlic powder may be substituted in the level of 2tsp per kilo,which is equivalent to 10grams.
    •Prepare by dissolving 1 tsp of food color in ½ cup of water.This serves as the stock solution to be kept in the refrigerator.
    PROCEDURE:
    1. Select good quality raw materials .Trim and weigh.
    2. Slice the raw materials.Measure and weigh all the ingredients.
    3. Mix meat with the curing mix (dissolve in ¼ cup water)
    4. Add the extenders and mix until it dries up.
    5. Add the rest of the ingredients and mix again.
    6.Cure at room temperature for 8-10 hrs or refrigeration temperature for 8-12 hrs.
    7. Pack in polyethylene bag in ¼ or ½ kilo.Store in freezer.

    I like your demo about tocino but I'm a bit confused wt the measurements in the recipe some are different than what you're saying.
    Like the meat enhancer I think it's 1tsp in the recipe but you put 1Tbs, I wonder if it will affect the meat texture, also is meat tenderizer same as enhancer? Here in US tenderizer is not powder.
    Anyway you're a good lecturer, straightforward & explains the purpose of the engredients. Ty & more success to your teachings 😊

      isolate po,ang carreagenan mo kasi pampabigat yun kung ititinda nyo po,pero kung pang sarili lang naman ok lamg po kahit walang carreagenan.😊
