Brother, instead of handling camera by hand during drive, which is very unsafe, can you please use your camera on a headband while driving. That will give a driver's perspective and your hands will free too. And use a separate camera mounted on windshield for another view.

I have watched few of your videos and observed you dont plan your trips well. When you are taking a lady along you must plan and be ready. Fuel, fastag, route, food etc.... Just a suggestion!
Any car you can pick but that should have a decent torque and power to pull.... I have driven Baleno with 4 members and baggage, to and fro from Mumbai to Mahabaleshwar and many other hillstations of Maharastra. Where I felt like Baleno is a bit underpowered. Rest all is about driving and timely gear changing without breaking the momentum asap.
