Hi! The benefit of using candy melts is it hardens very quickly. You definitely could use regular chocolate, it just may take longer to "set up" before you can press it to the cake
I did not! Once the chocolate hardens just enough, it peels right off. If you attempt to peel it off and you notice some sticking, that means it isn't dry enough yet

melodies2enjoy It was hard to video tape! I put 2C of sugar, 1/2C honey, 1/4C water and 1tbsp of water into a sauce pan and continuously stirred until it reached 300 degrees Fahrenheit. I then used a spoon to make little drops onto parchment paper, let it cook 10minutes and it's good to go!
