SAFFRON RISOTTO - How to Make Risotto alla Milanese

- Follow this Recipe to make a great Saffron Risotto - Risotto alla Milanese.
Ingredients:
1 1/2 cups of Arborio Rice
4 to 5 cups of chicken stock (Use vegetable stock for a vegetarian version)
3/4 cup of freshly shredded Parmigiano Reggiano cheese + more for serving (add cheese rinds to stock)
1 yellow onion
2 cloves of garlic
1 teaspoon of Saffron Threads
drizzle of Olive Oil
1/2 cup of Dry White Wine
2 - 3 tablespoons of butter
Salt and Freshly Ground black pepper to taste
Hi, fantastic recipe...and as I'm subscribed to your great channel, I just wanted to mention some small points regarding Saffron...Hope you would not be offended.
Saffron, shows its qualities best in the form of "powder":
The best tools are "Porcelain Mortar and Pestle"...no metallic, wooden or stone...
Completely dried strings of saffron and a small amount of "Granulated Sugar", should be grinded together until no "string" form of saffron is visible...The final powder can be kept in a small container with tight lid for more than 2 years...
...if the saffron, is to be used in the shape of "strings":
Add the strings to a small milk jar or as it's called "creamer", add up to 4 "ice cubes" gradually...Saffron, shows its colour and scent best in cold environment....the creamer I use is:
"Double Spouts Measuring Cup with Wooden Handle,URMAGIC 70 ml Espresso Shot Glass with Double Scale,Triple Pitcher..." (this is just a part of the item name in Amazon...any glass or porcelain creamer is fine)
