Is it possible to use sugary marinades and then cook a skirt steak in a pan/on the stove? I like pan cooking steak but I cant seem to get it to work with marinated flank. Especially sugary marinades.
Some sugar would be ok. Too much sugar with too much heat will cause the marinade to burn. Controlling the heat is helpful when using a sugary marinade. Once you get some color on the stark I would turn the heat down. As you turn the heat down and continue cooking the juices of the steak come out and it minimizes the burning. I hope this helps.
It would depend on the type of cut of meat to and thickness. If it’s not flavor then you could cut the piece smaller to have more surface area. It might need more time though too long in marinade sometimes draws too much moisture out of the meat. I hope that helps.
Just made my first steak using this marinade tweaked it a little bit. Steak came out great and the marinade was delicious

Try adding a corn starch mix to help bind.
