How to smoke a brisket (offset style smoker)

  • A good friend refurbed and gifted me his old Oklahoma Joe’s ‘Chuckwagon’ offset smoker. This is a really high quality heavy gauge steel smoker. Offsets are also referred to as a stick burner because wood is the preferred fuel source, not charcoal.
    We will cover how to smoke a brisket, focusing on a finishing technique that makes it extra juicy.
    This exact recipe landed us 6th place at a KCBS completion, our first time competing and first time with this recipe and technique.

      Jeez, I should be thanking you guys. This smoker is extremely nice and fun as hell to smoke with. Heavy gauge steel, wide grip wood handles, the huge smoke stack. It’s the quintessential style and bbq experience. Will take real good care of her.. The Chuckwagon! Thanks!!!
