You actually inspire and have helped me out, so I would love to help you out. I have over 10 years experience pouring concrete with my families concrete business started by my grandpa. Either that or do it in two pours. 2 pours 20 x 40 ft. You could handle with just another friend. Rent a big float and do a broom finish.

If 1 container is exacting where you want it, just measure how far away the back of the 2nd container is from the back of the 1st, and then the distance between the the front. That should put them at parallel to each other

If you plan to use the pad to park cars on or if you deal with extreme temp changes from summer to winter you will need rebar in the slab and possibly footings every so many feet going below the frost line to prevent shifting and warping making the slab crack and degrade. If you think you can tackle that I say go for it you never know what you can do until you try. If anything it will last a good 3 to 5 years allowing you to save more money to put in a more sturdy slab latter. As long as the shipping containers and support beams are not sitting on the slab it shouldn't affect you roof alignment the only thing that would affect that is if the shipping containers themself shift or settle into the ground throwing off the levelness.

I saw one channel called white house on the hill they are building an aviary but they had a really neat water feature built that has little ponds for the ducks and it circulates with a filter and everything and the small ponds are deep enough they can relax in the water if they want not real deep. Something like that in your gazebo area would be cool , something nice to look at but not real deep.
