    Next, pour the cherry kernels into a glass of boiling water, then strain the boiling water and add it to the pot containing the cherries. Now we put the pot containing cherries in the refrigerator for 24 hours so that the cherries drain well
    After this time, we put the pot on the heat until it boils and foams on the cherries. Now we collect the foam on the cherries with a spoon or spatula and throw it away. Be sure to do this until the clear jam becomes clear and shiny.
    Do not increase or decrease the heat under the pot because it will cause the color of the jam to turn black. It takes about 30 minutes for the jam to thicken. If the jam stays on the heat for more than 30 minutes, its quality will decrease and its color will darken.
    If after 30 minutes you see that the jam has not reached the consistency, take out the cherries and just let the jam syrup stay on the heat until it reaches the consistency and becomes stretchy. Finally, we add some lemon juice and vanilla if desired.
    Of course, the possibility of sugaring this jam is very low, and you can also remove the lemon juice. Now let the jam cool for 12 hours at room temperature, then pour it into a glass container and store it in the refrigerator.
    One of the important points that we must pay attention to in preparing this jam is the cherry juice. Cherry juice is prone to a lot of foam, and for this reason, you must be very careful during cooking so that the cherry juice does not overflow.
