Chicken Choila (Haku Choila) | हाकु छोइला | Cook with Ira | Episode 16

  • Ingredients
    Chicken cut into long strips - 2 lbs
    Green Garlic or Green Onions cut into long pieces - 2 cups
    Garlic Paste - 2 tablespoons
    Ginger Paste - 1 teaspoon
    Red Chilli Flakes - 1 tablespoon
    Cumin Coriander Powder - 1 tablespoon
    Paprika Powder - 1 teaspoon
    Red Chilli Powder - 1/2 teaspoon
    Fenugreek Seeds - 1/2 teaspoon
    Mustard oil - 4 tablespoons
    Turmeric Powder - 1/4 teaspoon
    Salt to Taste
    Process:
    1. On an open fire, grill the meat until it develops really nice charring on the outside. Keep flipping the meat so it doesnt get burnt. The key here is you want the meat to be tender on the inside while having a nice smoked charred on the outside. If you are cooking chicken, you may want to cook the meat additionally on low flame so it gets cooked all the way through and later turn the flame high and cook it for 1-2 minutes to get the color.
    2. Take the strips out of the flame and cut them into bite size pieces. One tip to rememeber is that prepare all the ingredients before hand because you want to marinate the meat as soon as it comes out of the fire. This way, the meat is still juicy and absorbs all the spices and does not become dry.
    3. In a mixing bowl, add the chicken, green onions/garlic, ginger and garlic paste, red chilli flakes, cumin and coriander powder, parprika powder, red chilli powder, salt to taste, and 2 tablespoons of mustard oil. Mix everything very well.
    4. In a small pan on high heat, add 2-3 tablespoons of mustard oil. Add fenugreek seeds and when it starts getting darker in color, add turmeric powder, and pour the oil over the mixed meat.
    5. Mix everything one more time until everything is incorporated well.
    6. Haku Choila is ready to eat. Serve with some beaten rice and piro aloo.

    What can I substitute for mustard oil, which apparently has some health concerns per the FDA? I love choila...thanks for sharing the recipe!
