Yeah ESP can be turned off completely in a Mercedes by engaging the dyno roller mode through the secret menu on cluster. How to access it differs between steering wheel and cluster models. Easiest to just search youtube with the model and year etc

Yes you can, put it in the secret mode for dyno/roller testing where everything is off.
Race mode is only available on Mercs with a wet clutch. Models with a torque converter don't have it.
