The one thing I absolutely love about you is that you make learning to cook or bake something this wonderful experience for everyone. You make things so easy to learn. You don’t look down upon anyone. For me it’s watching someone who loves something sooo much that he wants everyone else to learn to make things also. Just the look in your eyes and smile tells me that you really love what you’re doing and also so passionate about what you’re doing to. Sooo after all that let’s learn to bake something new lol. for all those that are wondering, cream of tartar plays an important role in stabilizing the egg whites to keep their form. i will try and make a mocha version for Christmas. with a sprinkle of Kahlua in the sponge cake, and grind some instant coffee into powder in my spice grinder to add to the buttercream. hopefully the powder will dissolve in the creamy butter.
I love it! I was very worried when the flour went in after the soft peaked egg whites but the cake looked beautiful. And yes I have yucked up many a tea towel for the rolling and unrolling the cake. I will try this method (as long as I can find space in the fridge!). Thank you!!

Used to have this in Max Mercier’s Le Parisien in SLC, UT at Christmas time. That Frenchman introduced that frigid city to many things deliciously French and woke us all up. I miss the tastes of his creations. I was a server there so I got to try it all. Haven’t had any better in home or at a restaurant since…even tho I try.
lol, i just made one yesterday from your last year recipe 🤣 tips for first time maker, roll the cake at least once first while its still warm, then wait for few minutes to unroll and put the filling to prevent the cake crack oh and lay a parchment paper (spray both the pan and the paper) with the edge fold up, so can just pull the cake out and roll it with the paper I put in the fridge with the parchment paper and then wrap extra layer of plastic to prevent it dry up lol If want to make the side look better with more swirl can roll it on the short end (saw this on other youtube recipe 😆), but you want to half the portion for the Ganache on the outside

Today, i made your sweet potato / spinach / cheese souffles... My kitchen space is only a stove-oven with a working surface of about 18" square. Still, it turned out really good. i used the silicon cup cake sheets. So if i can do it, anyone with a half descent kitchen should have no problem at all. Merci i put them in the freezer to give as a Christmas present.
