Crispy pata nila is hit or miss. Pag matigas ang balat and it does not crackle easily, then the issue is either on the cooking or the pata itself. Livestock in BGC or QC serves some of the best crispy patas here in the NCR. They use the front leg which is more tender than the hind leg of the pig.
