Respectfully, it needs the "sour" element. Vinegar, either added to the large quantity of (1/4 cup) olive oil; or sprinkled just by itself on the chicken will wake up this recipe further.

Thanku for this superb recipe!!! After brining when we remove the chicken from water do we need to wash it also with fresh water or we just pat dry completely with a towel in order to leave the taste of the salt embedded in it through the deep gashes/cuts into it ??

I remember, we used to be taught in school, way back in the era of 70's that nobody is perfect in this World, but I'm afraid you've proved them wrong as all the nitties & gritties pertaing to ur recipes are explained fantabulously up to the mark without any decimal of flaw that I believe, even a new born baby will be able to cook after following ur matchless recipes. The best part of ur recipies is that unlike all other cooking channels you do mention to add salt as per taste, but you do also mention the quanity of salt that you put in which is imperative for the amateurs. I'm a big foodie and also fond of cooking in ur style once in a while.
