    Quang I have watched a lot of your videos, but now your in my world of charcoal, Kingsford charcoal is the best in my opinion. Now Costco sells professional kingsford charcoal and it’s cheaper than the regular, it burns longer and you don’t have to add any. There is also a charcoal that’s called “Cowboy “ charcoal, it’s good stuff also. You also using a Weber charcoal grill 22 inch. It’s my go to grill. Good choice. And yes get you some wood chips I like hickory, or pecan,cherry,apple but the best is a hickory and oak mix which is hard to find. But get the chips not chunks light up your chimney, then fill up a solo cup with your chips and let them soak for about 20 minutes or so, dump your coals out and spread them around then drain your chips and then add them to your coals, then close your holes on the bottom about half way closed and do the same on the one on top of your kettle, when the smoke starts coming out of the top good place you meat on the grill and close the the holes on top almost all the way and it will smoke your food well.after 30 minutes or so flip your meat and put lid back on and smoke for another 29-30 minutes. Then open your holes on top all the way. Then cook until your meat is done. Then ENJOY!!!!

    Quang, place all the charcoal on one side and the chicken all on one side as well. (the side with no charcoal) close the lid and let the indirect heat cook the chicken through. After, 30-40 min - use the last 10 min to put the chicken in the coal side but don’t close, use it to get the char on your skin and crisp it up. This way you’ll never have over charred chicken.
    Now, when you’re using boneless chicken such as thighs, you don’t need to close it at all - just keep grillin. This looks fire, I’m going to try it!

      @@MyspacHor911 the bone doesn't change the cooking method *much* but skin on vs no skin could. Still wouldnt change the cooking method usoolive describes. There are many ways to cook with fire that do have chicken directly over fire or cooking completely by radiant heat from a fire. Check out Francis Mallmann Seven Fires or your favorite outdoorsman.

      @@TheModeRed yeah bro, this method is great for bone in chicken because unlike a traditional smoker you can’t control the temp of coals. And when the fat drippings from your meat start hitting them coals the fire can get out of hand.
      That’s why I let it cook indirect all the way through to get that smoke flavor & finish it off on the hot side for some char. Now, if you want to cook bone in chicken over direct heat, you better be flipping them things constantly!!! Lol

    I use a hickory type wood that grows naturally here on the island of Saipan. It is called Tangantangan (Gastor Oil plant), it was said to have been brought in by the US military after WW2 from Hawaii.

    For chicken i don't think you need 2 sides: direct heat and indirect you could cook it all under direct and leave the lid in

    Another easy way to light the coals is to use a portable gas stove. That way you can get all of the coals hot, and don’t have to wait as long.
    It’s also useful if you use premium coal like binchotan, which takes longer and needs a strong heat source to breakdown.
    If you have more time, you couldn’t probably develop a stronger flavour by smoking the chicken 2-3 hours (hot and fast), then grilling and glazing to finish. Time consuming by would add another layer of flavour.

    Quang..Kingsford is a good brand but there are soooo many out there. You should research “lump charcoal vs briquettes” to see what you find and what you like. You should also watch a few videos to get some ideas. I smoke on my charcoal grill and I use wood chunks instead of chips more flavor and longer burn. And the amount of chicken you cooked usually takes about 45 to and hour depending on your fire you want to make sure it’s done. Great job..! Can’t wait til you do a steak or even a brisket 😋❤️

    I'm surprised Quang didn't develop a Grilling game after all these years. Well I think you're about to have a lot of fun. The way the vietnamese grill meats on the streets is a whole different experience too than the way Americans do it. Maybe your wife knows.
    I think because they sit the coal up closer to the meat and probably flip often, well on this note its essentially like Japanese style bbq yakatori. It gives it true smokey flavor from the meat drippings (when it hits the coal that smoke perfumes the meat) rather than just the charcoal grill flavor (and rather then wood chips).
    But I find this technique kinda hard to achieve haha, to get the meat dripping and smoke perfuming the meat I think temp has to be right, protein to heat source has to be right and obviously you shouldn't burn it thus it gets turned often.

    That's how I've done buffalo wings for 30 years. Cook however you want, coat in buffalo sauce, and then on the charcoal grill! That way of cooking also knocks out some of the vinegar taste from the hot sauce. And they're not as slimey. A small squirt of fresh lime can be good if want too. And yes, always Kingsford charcoal, regular, not the self lighting!

    In charcoal grill..you wanna spray the grill with a little non stick & seasoned water for any fire pop ups & close the hole of the grill lid to get better smoke flavor

    You’re good with Charcoal Quang. You don’t want to overfill your grill with charcoal. You did it right by having the chimney.

    Charcoal stacked higher in the grill will give you more heat but will burn your protein before cooking the inside. Adding wood chunks instead of chips will give Great flavor to your food. Chips will burn up fast and not give off much smoke flavor. I like Apple for Pork or Chicken. Hickory and Mesquite are Great with chicken or beef. Many other woods to choose from. It’s a personal choice. I buy Weber Wood Chunks. Reasonably priced nice size chunks in a bag.
    I buy Kingsford Original. Nice consistent burn time. Easy to adjust Temp using your upper & lower vents. The reason this has more smoke flavor is it cooked longer with lid closed. I own an Inkbird Temp Probe that has four Probes. It comes with grill grate clip so you can set your grate temp for bigger longer cooks. Pork Shoulder or Butt, Prime Rib Roast, Chuck Roast, Whole Chickens, Briskets, etc.
    Quang,, I have a question for you. We had a Chinese restaurant that closed after 5 years who made the Best Salmon! It tasted like it had a light amount of soy, ginger, maybe hoisin, brown sugar. I tried making it a few times. It’s similar but not as good. Would love your take on amounts of each ingredient for Baked Salmon. I will bake this on my Weber Kettle. Yumm!

    Royal Oak natural hardwood lump charcoal. Home Depot Carrie’s it in the states! I never use those charcoal that are manufactured with a bunch of chemicals. They all the same size and shape.

    Q what about Taco fried chicken wings? I added 3 packs of taco seasoning mix with flour and corn starch and it came out pretty good it tasted like taco chicken wings 🙂
    After frying put it bowl and add more seasoning and mix etc..

    you need a cool zone on the grill. dont just flatten the charcoal out evenly. about 2/3 of the charcoal one side for searing and the cool side without charcoal for indirect heat the actual cook while covered.

    Another good resource for your bbq pit is a VORTEX chimney it works great for Chicken wings and Chicken Drums.

    Jao An Quang! Siracha is hard to come by these days.... It's like liquid gold....I only use the Rooster one.... It's even scarce in California....🇺🇲❤️🙏🥑🥑🥑🥑🥑🥑🙏❤️🇺🇲 I love siracha on avocados😊

    You need a Weber kettle 22”. You had more charcoal taste because you kept the lid on. Next time you cook 🍗 try the vortex method much easier than turning your grill crate around

      the best is to use some smoke chips soaked in water or use the Lump charcoal.. it burns longer than regular briquettes..If I smoke larger cuts of meats like brisket or pork butt.. I use the mesquite wood , Oak wood or pecan wood..
