      I just use one that I got from the USA. I think you can just use dried lemon zest, pepper, salt, garlic powder and you should be able to replicate it. The one I use does have sugar but it works out to adding just 2 carbs to the entire recipe so I don't bother about that sugar.

      I read that EVOO is a polyunsaturated fat, making it potentially dangerous to fry with. Were they incorrect? I've tried using lard too but both of these have a pretty low smoking point.

      @ChrystalVanDusseldorp 5 лет назад +1

      Light olive oil has a smoke point of 460F, so you can fry with it. I use a mix of avocado and coconut in my fryer and keep it at 350F and it does great. Lard, or manteca in the latin aisle, is good too. No Crisco (it's vegetable shortening) or vegetable/seed/bean oils.

    • @HeadbangersKitchen
      @HeadbangersKitchen  5 лет назад

      Sara, my life is too short to care about that. I generally add 1 tbsp are a general figure. If you want you can weigh the oil before frying and weigh it again after frying and check the difference in weight. You can also weigh the paper towel before and after using it to drain the oil from the chicken that way you'll have an accurate measurement. My life though, so too short to do that :P

    • @HeadbangersKitchen
      @HeadbangersKitchen  5 лет назад

      No pun intended but I just 'wing' it :D but on a more serious note I think think video I used just olive oil not ghee. I use ghee for anything that has Indian flavours as I don't fancy the flavour of ghee with most western dishes. I also throw in bacon fat sometimes if I have enough in the fridge. You could also use lard. It really depends on how accessible these are to you. I would say even duck fat or goose fat is good.

    Chef John has done oven baked that were crispy. I think he used baking powder on the wings and let them sit a bit before baking. That said, frying is more consistent, IMO. They say peanut oil is best, I use canola. Olive oil is expensive here as is ghee and olive oil doesn't have as high a smoke point the other two. Anyway, I like your recipe. It's fast simple and tastes good.

    • @HeadbangersKitchen
      @HeadbangersKitchen  5 лет назад +1

      Yeah I think I've watched a ton of his recipes as well. Well the issue is we want to avoid peanut oil, canola oil and other hydrogenated oils on Keto. If you fry wings like once a month in that it won't kill you but it's best avoided. Also there is a special olive oil for cooking which I use and lard and bacon fat or duck fat are other great options.

    • @nokoolaid
      @nokoolaid 5 лет назад

      @@HeadbangersKitchen I fry for others in the family. I don't use the fryer for myself 99% of the time. I usually use olive oil (the real thing, but that's another subject) and/or butter. I used to save bacon fat. Haven't in a while. Great for making eggs and pancakes of any kind. Haven't tried lard or duck fat yet. What I like to do is bake bacon on Sunday morning and then season chicken thighs with indian seasonings and bake them in the same pan after I am done baking the bacon. It's quite good.
