Hello, Culinary Student here! just wanted to help With the Pasta making!
Roll the dough out into a somewhat thick slab, make sure it fits evenly in the device and doesnt come to close to the edges, or your pasta will tear (through the entire process make sure it stays in the middle or it will tear at the edges)
Put it through once, Trifold it, Roll it out with the rolling pin, SLOWLY adjust the dial lower, one number at a time, pass the pasta through, Trifold it, Roll it out (it'll start to get tougher, which si good, we want the pasta to hold its shape and be strong), and continue that process until you are able to cut three even sections, Sprinkle with flour on BOTH sides to prevent sticking.
Select the desired shape/type of pasta and put it through

The hardest dish would have to be dampa, and going off memory as like an 8 year old on a school camping trip one day, it was pretty easy. So if anyone can find a decide that makes any Australian dish simpler, I’ll give a whole Australian dollar.

I have the dumpling maker, mine broke the first time I used it. I had to use super glue to attach the press plate back on. Also if you look at it hanging on the wall, it's shaped like a carrot. Yep I make meatballs with my hands. I also have the pasta maker, and really enjoy using it. I use it to make dumplings , pies and pasta, also ravioli dough as well.

I noticed how the dumplings opened up quite easily, using some beat up eggs on the circumference of the can help to make it stick.

I've always loved your cooking videos, and this one is great. I'm amazed at how many noodles you get from so little dough in the pasta maker! Too bad the meatball makers weren't easier/better than your hands. I enjoy meatballs but dislike making them.

I think that next time you do this you should do majedderah.
Basically boil rice and lentils with a bit of spices.
It's an arabic food.(I don't know which country it's from but it's from the middle east.)

I have that same pasta maker. Funny to see it is the same design from at least the 80s. I think my mom's model is from that era, at least
