  • Glenwyvis Highland Single Malt Scotch Whisky Review
    Glenwyvis is one one of the new wave of Scottish distilleries producing a relatively young single malt whisky that we have heard lots about but have not tried anything from yet.
    Generally we are enjoying the flavours in these new, young whiskies and Glenwyvis seems to be along the same lines. The distillery has an interesting set up being community owned and we are really interested to see what is next from them!

    The fruity flavours are due to an extended fermentation period where acids react with the alcohol to produce chemical compounds called esters. Esters are commonly associated with the pear drop smell but many fruits get their aromas from naturally occurring esters. Butyl acetate has an apple smell and ethyl butyrate smells like banana and pineapple. The traditional pear drop smell comes from isoamyl acetate and butyl propionate.

    Thanks again for all the content! Tammy and I never miss a single one. Word of warning...I will be returning to Scotland at the ass end of September and will be trying to get to Callander again to drop in. If you have a Washington or Pacific Northwest whisky you fancy trying don't hesitate to ask. Going to be bringing plenty of stuff over with me, big Barfly doings in Glasgow on September 30th!     the community idea is a cool approach, but for me it was still too young / sharp, especially I had this green, sour, unripe gooseberry in my nose... well, you have to like that. I'd rather wait a few more years and then give the malt a second chance.
